Ethiopia is the birthplace of coffee and the main producer of Coffea arabica in Africa. For this reason, Ethiopia is recognized as the homeland of coffee.
Coffee production and processing
Ethiopia's natural conditions are extremely favorable for coffee cultivation. Coffee trees are mainly distributed in the highland areas of the south at elevations of 1,100 to 2,300 meters. The core producing regions include Harar, Limu, Djimma, Sidamo, Kaffa, Yergacheffe, and Wellega. The soil in these areas is slightly acidic, well-drained, loose in texture, and reddish in color.
Ethiopian coffee is harvested once a year. From March to April, the coffee trees bloom with white flowers, and then the fruit gradually develops. By September to December, the red coffee cherries enter the mature picking period. From November to December, coffee from the new season begins to be exported.
At present, about one quarter of Ethiopia's population directly or indirectly depends on the coffee industry for its livelihood. Cultivation remains primarily traditional, with farmers tending coffee trees by hand, applying organic fertilizers, and largely not relying on chemical pesticides or herbicides. For this reason, the vast majority of coffee produced in Ethiopia has the attributes of organic coffee.
Divided by cultivation model, Ethiopian coffee can be classified into three types: forest or semi-forest coffee, garden coffee, and plantation coffee.
Forest or semi-forest coffee accounts for about 60%. This type of coffee grows in wild woodlands, uses no chemical pesticides at all, and instead relies on biological methods to control pests and diseases.
Garden coffee accounts for about 35% of the total. The cultivation in these coffee gardens follows a multi-layered layout, with coffee trees in the lower layer, relying on the shade of other crops to obtain suitable growing conditions. The main sources of fertilizer are fallen leaves, dry grass, and animal manure.
Plantation coffee accounts for only 5%. This is a modern cultivation model. The coffee trees also grow in blocks, but new varieties are selected and planted in alternating rows with shade trees.
Divided by processing method, Ethiopian coffee can also be classified into two categories: washed coffee and sun-dried coffee.
Washed coffee accounts for 35% of total exports. High-quality washed coffee is processed from freshly picked, fully ripe cherries, and the picking process is extremely meticulous, with professionals strictly overseeing it throughout. The selected clean coffee beans must be pulped on the same day they are picked, and then successively fermented, washed, dried, and hulled. After processing is completed, the moisture content of the coffee beans is controlled at around 12%.
Sun-dried coffee accounts for 65% of total exports. This type of coffee is mainly picked by farming households, and the red coffee cherries are spread out on concrete floors or raised tables to dry until the moisture content drops to about 11.5%, after which they are hulled and cleaned.
Coffee grading and quality control system
Ethiopia's coffee grading and quality control system covers three levels: producer, regional, and national. Before all coffee is transported out of the producing area, it must be inspected by local inspection agencies, and then undergo a second inspection at the coffee inspection and grading centers in Addis Ababa and Dire Dawa to determine its quality grade. Grading is completed before auction and sale, which is crucial for all groups involved in production, purchasing, export, and consumption. Before the export stage, coffee must also be submitted to the national quality control agency for inspection to verify whether indicators such as origin and color meet export standards, thereby safeguarding the international reputation of Ethiopian coffee.
At present, the grading and quality control of Ethiopian coffee is mainly based on two indicators: visual inspection and cup evaluation. The examination includes the color, cleanliness, origin information, taste, and flavor characteristics of the coffee beans. Export grades are indicated by numbers. The highest grade for washed coffee is Grade 5, and the highest grade for sun-dried coffee is Grade 4. After grading is completed, the coffee can be exported once the origin is labeled. Exports are usually settled by letter of credit, which can both reduce the foreign exchange collection risk for exporters and provide quality assurance for importers.
According to legal regulations, all coffee must be traded through the auction houses in Addis Ababa and Dire Dawa. During the coffee harvest season, the auctions are even held twice a day.
Coffee exports
Coffee is Ethiopia's most important export cash crop and the core source of the country's foreign exchange earnings. Ethiopian coffee exports account for about 3% of the global market share, ranking as the world's eighth-largest coffee exporter. Export volume rose steadily from 58,000 tons in 1990-1991 to 110,000 tons in 1995-1996, and remained basically at that level for several years afterward. In 2001-2002, export volume exceeded 110,000 tons, and in 2002-2003 it further reached 127,000 tons. However, international coffee prices declined for ten consecutive years, dealing a severe blow to Ethiopia's foreign exchange earnings. Before the sharp price drop, coffee export revenue accounted for more than half of Ethiopia's total foreign exchange income; now that proportion has fallen to about 35%. Nevertheless, according to reports from the International Coffee Organization, coffee prices began to recover starting in 2002, rising from 41 cents per pound in September 2001 to 52 cents in 2002, and further to 59.7 cents per pound in 2003. The average price in March 2004 was 60.8 cents per pound, an increase of 50% compared with September 2001. This is undoubtedly a positive signal for Ethiopia.
Ethiopians consume a considerable amount of coffee. In 2003, domestic consumption accounted for 42.3% of that year's total production, with per capita consumption of 3 kilograms. However, more than half of the annual coffee production is still used for export to earn foreign exchange. The main export destinations include the United States, Italy, the United Kingdom, Sweden, Norway, Greece, France, Belgium, Germany, and Australia.
Before 1974, the rights to coffee production, processing, and trade were all privately owned. During the period of military rule, private farms were nationalized, and smallholder coffee producers were neglected. In 1991, Ethiopia's transitional government introduced new economic policies encouraging private merchants to participate in coffee exports, and the number of private coffee exporters subsequently increased significantly. At present, nearly 90% of coffee exports are controlled by private exporters.
Characteristics of Ethiopian coffee
The natural characteristics of coffee beans cover dimensions such as size, shape, acidity, texture, taste, and aroma. Ethiopian coffee beans are relatively small, highly aromatic, and have a wine-like acidity, making them highly favored by coffee enthusiasts. With their unique flavor and aroma, Ethiopian coffees are often used in the production of beverages, ice cream, and candy, as well as in variety improvement.
The world-renowned Ethiopian coffees mainly include the following:
1. Limu coffee. Produced in areas at elevations of 1,400 to 2,000 meters. Washed processing. Outstanding quality, rich nutty aroma, moderate acidity, with a wine-like intensity. Annual output 29,000 tons.
2. Djimma coffee. Produced in areas at elevations of 1,400 to 1,800 meters. Sun-dried processing. Mild acidity, with nutty aroma and a long finish. Annual output 70,000 tons.
3. Gimbi coffee. Produced in areas at elevations of 1,500 to 2,300 meters. A gourmet-grade coffee with balanced acidity and fruity aroma. Annual output 34,000 tons.
4. Yergacheffe coffee. Produced in areas at elevations of 1,500 to 2,200 meters. It has a mocha flavor, with floral and spice notes interwoven. Average annual output about 28,000 tons.
5. Sidamo coffee. Produced in areas at elevations of 1,400 to 2,200 meters. Suitable acidity and excellent quality. Average annual output about 37,000 tons.
6. Harar coffee. Produced in highlands above 2,700 meters. Hailed as one of the best coffees in the world, with medium acidity, alluring exotic flavor, a slight vinous quality, and dried-fruit aroma; it is a pure mocha coffee. Average annual output about 26,000 tons.
