Why Has Wet-Hulling Become Mainstream?

Wet hulling is the most common green bean processing method in Indonesia, and its birth was forced by the local climate. Indonesia's humidity remains between 70% and 90% all year round, typhoons visit frequently, and annual rainfall even exceeds 2,000 mm. Such harsh conditions make it impossible to carry out 2 to 3 weeks of sun-drying as in African producing regions; while washed processing is not only time-consuming but also has higher labor and water costs, which Indonesia, aiming for mass production, cannot afford. Coffee cherries with the skin and pulp removed are put directly into a pool for brief fermentation of a few hours.
