The Structure and Principle of the Moka Pot

The moka pot consists of three parts: the upper chamber, the filter basket, and the lower chamber. The lower chamber holds water, the filter basket holds more finely ground coffee, and the upper chamber receives the extracted coffee liquid.

If we first set the lower water chamber aside and use our hands to fix the filter basket to the bottom of the upper chamber, we can observe the extraction process more clearly.

The metal tube at the tail of the filter basket is coaxial with the metal tube in the center of the upper chamber and has the same diameter. This design keeps the water flow in a straight line. When the water temperature in the lower chamber rises to a certain level, under pressure, the hot water is pushed upward from the metal tube at the tail of the filter basket, passes through the coffee grounds in the filter basket, then through the filter screen at the bottom of the upper chamber, and finally the coffee liquid surges out from the central metal tube of the upper chamber under pressure. This completes a full coffee extraction.

Just from the safety valve above the lower chamber, you can tell that this is a container with pressure. When the filter basket is correctly and firmly screwed onto the lower chamber and placed on a heat source for heating, the hot water generates pressure. Therefore, the entire extraction process takes place under pressure. If the grind is too coarse, the coffee liquid will surge out quickly, possibly even like a fountain; if the grind is too fine, you will hear the humming sound of boiling water, but the coffee liquid will be slow to come up. How to Use a Moka Pot

1) Pour hot water into the lower chamber of the moka pot. The water level must not exceed the lower edge of the safety valve. The safety valve marks the maximum water level limit for every moka pot.

Cold water is not recommended, because it prolongs the time the water soaks the coffee grounds, making the extracted coffee bitter and cloudy.

2) Add coffee grounds. This step is one of the important factors affecting the final cup (water amount, filling the grounds, extraction timing).

a. Not enough grounds. If you choose the maximum water level in the lower chamber, then the grounds should also completely fill the filter basket. Otherwise, depending on how insufficient the amount of coffee grounds is, the coffee taste will gradually become weaker.

b. Using a tamper to press the grounds. Many friends borrow an espresso-machine tamper to press the moka pot's filter basket, which is a laborious and unrewarding practice. If you press too tightly and the coffee grounds are too fine, it will be very difficult for the coffee to be drawn up. The key to filling a moka pot is: fill it as much as possible rather than pressing it tight. You can add grounds in batches and tap the edge of the filter basket with your hand so the grounds spread as fully as possible without leaving gaps.

4) Place the correctly assembled moka pot on a heat source for heating. For easier observation, Front Street suggests brewing the moka pot with the upper lid open.

Soon the coffee liquid will overflow from the central metal column of the upper chamber.

As extraction continues, the coffee liquid level will gradually rise. When crema appears on the surface, please be alert that the coffee extraction is nearing its end. When the color of the crema changes from dark to light, the heat source should be cut off immediately to stop extraction; otherwise the coffee will enter an over-extracted state.

Pay special attention: do not wait until a "wooo" sound appears before stopping, as such coffee may even have a burnt rubber taste.

6) If conditions permit, you can prepare a towel soaked in cold water in advance and place it next to the heat source. When finishing step five, place the moka pot on the cold towel. This can greatly reduce the possibility of over-extraction.

Precautions for the Moka Pot

1. The sealing gasket under the upper chamber of the moka pot should not be used for more than one year at most; be sure to replace it. This is somewhat like the rubber sealing ring of a pressure cooker. If it is not replaced in time, poor sealing and air leaks will occur.

2. If the pressure relief valve of the lower chamber releases air or leaks water when making coffee with the moka pot, replace the thin metal sheet in the middle of the pressure relief valve in time; otherwise the moka pot will lose a great deal of pressure.
