After coffee cherries are harvested, they must enter the processing workflow as soon as possible. The processing involves removing the outer skin and pulp, extracting the seeds, and stripping off the parchment, yielding what we commonly call green coffee beans. The processed beans remain in their green state and still require roasting before they become the various flavored coffee beans we drink daily.
1. Coffee Processing Methods
Coffee processing methods generally fall into three categories: the dry method, the washed method, and the semi-washed method. Typically, about 5,000 kilograms of coffee fruit yields roughly 1,000 kilograms of green coffee beans.
1.1 Dry Method
The dry method is a traditional processing method with a long history. After harvesting, the fruit is dried by natural sunlight, and in some regions mechanical drying is used in parallel. The washed coffee processing flow is as follows: harvesting → water tank (removing impurities and unripe beans) → pulping machine (removing pulp and impurities) → fermentation tank (removing mucilage attached to the parchment) → washing channel (selecting light and hard beans) → drying yard (or drying machine) → huller (removing parchment) → grading (electronic bean sorting machines, hand sorting, screens, etc.) → export.

Coffee beans processed by the washed method have a relatively uniform appearance, with a lower proportion of impurities and defective beans, and a moisture content generally around 16%. Its strengths are few off-flavors, a clean and transparent mouthfeel, and bright fruit acidity; its biggest shortcoming is that during fermentation, the beans easily pick up sour and astringent off-flavors—a single bean with a fermentation defect is enough to ruin the flavor of 50 grams of beans.

1.3 Semi-Washed Method
The semi-washed method, also known as the “honey process,” is a compromise between the dry and washed methods, omitting the fermentation step of the washed method. The flow is: harvesting → water tank (removing impurities and unripe beans) → pulping machine (removing pulp and impurities) → washing channel (selecting light and hard beans) → drying yard (or drying machine) → huller (removing parchment) → grading (electronic bean sorting machines, hand sorting, screens, etc.) → export.

The honey process offers better quality stability than the dry method, but still falls short of the washed method. In recent years, this processing method has become quite popular among coffee enthusiasts; the finished cup is sweet with rich crema, making it suitable as a base bean for espresso extraction. Its advantage is that it better preserves the inherent flavors of the coffee bean itself, with stronger sweetness and prominent wine-like notes. The downside is that after the outer skin of the coffee cherry is removed, the beans are highly susceptible to contamination during drying and may even develop mold.
