Pour-over is essentially a gentle extraction of coffee. What makes it appealing is that the whole process carries a unique sense of ritual while requiring you to stay highly focused. This focus allows you to temporarily set aside the troubles of the previous second and block out the surrounding noise, even if only for a few short minutes.
If your attention is scattered, it is hard to make a good cup of coffee. However, focus alone is not enough—you also need "gentleness." Here, "gentleness" refers to fine control over various variables—the amount of coffee beans, grind size, water temperature, water hardness, flow rate, extraction time, and even pouring technique and timing are all included.
So how exactly should you manage these factors to brew a satisfying cup of pour-over coffee?
Overall, as long as you implement the following three points, your coffee will not turn out too bad.
1. Hot water should be poured into the central area of the coffee grounds. Never keep pouring at just one point, and do not pour onto the outer edge of the coffee grounds either;
2. The water stream must be thin, slow, and gentle to ensure the coffee is fully extracted;
3. Japanese-style pour-over has a little technique: use the water stream to draw the Japanese character "の" on the surface of the coffee grounds.

1. Place the filter paper flat into the dripper, pour the coffee grounds into the center, and gently shake to level the surface.
2. Pour boiling water into the gooseneck kettle, wait until the temperature drops to around 92°C, then begin extraction. First use a thin stream to moisten all the coffee grounds. If the coffee was freshly ground, it may expand or bubble at this point. Let it sit and bloom for 20 to 30 seconds.
3. After blooming, slowly and carefully pour hot water into a circular area about 3 cm in diameter at the center of the coffee grounds. Try to keep the pouring speed consistent with the current dripping speed of the coffee.
4. Before the center of the coffee grounds expands and collapses, pour water again. Never pour at just one point; constantly change the position where the stream passes over the coffee grounds to ensure all grounds are fully extracted. When the coffee begins to drip slowly in drops, remove the filter paper to avoid the final coffee impurities also falling into the cup.

1. Place the filter paper properly into the dripper. First pour hot water to wet the filter paper. This not only helps the filter paper fit more closely to the dripper, but also removes the papery smell of the filter paper. Pour away the water used for wetting.
2. Add the coffee grounds and gently shake to level the surface.
3. Let the boiling water in the gooseneck kettle cool to around 90°C, then begin extracting the coffee. Note that the water stream should be thin and slow. After moistening all the coffee grounds, let it sit and bloom for 20 to 30 seconds.
4. After blooming, pour hot water again, with the amount reaching roughly the middle of the dripper. At this point the coffee grounds may expand or produce bubbles. When the bubbles begin to disappear, pour water a third time, this time to about the edge of the dripper. After the liquid level drops slightly, pour water a fourth time, again to near the edge. When the coffee begins to drip slowly in drops, remove the filter paper and end the extraction.
