These beans come from the Moca estate in the Marcala region of Honduras. The inspiration for barrel fermentation comes from winemaking. During the coffee fermentation stage, the barrel allows a small amount of air to pass through the barrel wall into the interior, promoting moderate oxidation of the coffee beans. The introduction of an appropriate amount of oxygen also speeds up the fermentation process, softens tannic acid, and allows the fresh fruit aroma to gradually develop into a rich and varied mature wine aroma. The barrel has moderate hardness, ensuring good waterproofness and storage safety. Because the barrel contains a certain amount of tannic acid, during the storage of green beans, the tannic acid seeps into the beans, giving the coffee layers and a rich wine aroma.
