Usage Method:

"Third Circle–Medium Water Column": At this point the coffee flows out faster, so increase to a medium water column to keep the grounds developing upward.

"Fourth Circle–Large Water Column": Increase the water column further and pour until one cup of coffee is reached. At this point the foam turns white, and most substances have been extracted.

"Interrupted-Pour Method"

Using the interrupted-pour method to extend the steeping time can increase coffee concentration and add body to the coffee's flavor—it is a very useful technique. The method for a single interrupted pour is as follows:

The mnemonic is: small small small medium large

1. In the first circle, just wet the coffee grounds and then stop (do not let too much coffee drip down).

2. Observe the foam development. If the foam is collapsing or the surface is drying out, wait about 1 minute, then pour in the small-small-medium-large pattern until the desired amount is reached.

(After the interrupted pour, wait until the grounds stop developing and the surface is relatively dry, then begin the small-small-medium-large pour until one cup is reached.)

"Temperature"

Extraction efficiency: Like other brewing equipment, temperature affects coffee extraction efficiency. Bitterness and astringency are among the later-extracted flavors. If the brewed coffee is too bitter or burnt, try lowering the temperature. Conversely, if it feels like many flavors are still left in the coffee grounds, consider increasing the temperature.

Grounds development: When the beans are fresh, another notable aspect of pour-over is the development of the grounds. In terms of temperature, the higher the temperature, the faster the coffee grounds expand upward after water is poured onto them. For light-roasted beans or when the grind is finer and the grounds do not easily expand, you can consider increasing the water temperature to help the grounds develop.

"Grind Size"

Extraction efficiency: Similarly, in pour-over, grind size also affects extraction rate—finer grind means higher extraction rate, coarser grind means lower extraction rate. Pour-over involves continuously adding water and continuously filtering, unlike siphon which steeps. Therefore, grind size is much more important for flow rate and grounds development.

Grounds development: Usually, for fresh coffee beans, grinding to a size near Taiwan Sugar No. 2 granulated sugar gives better grounds expansion (of course, this also changes somewhat depending on the roast level). Next, the coarser the grind, because water passes through quickly, the grounds develop slowly; the finer the grind, because water does not pass easily and gets stuck on the grounds, they also develop slowly. So for coarse grinds, the water column and pouring speed can be slowed to adjust the flow rate; conversely, for fine grinds, you can dig a hole in the grounds before pouring to improve water penetration.

"Coffee-to-Water Ratio"

Concentration: Generally speaking, to increase coffee concentration, increasing the amount of coffee grounds is of course one method, but pay attention to the penetration situation after water is poured. When the amount of grounds increases, the layer of grounds in the dripper also thickens; it is recommended to use a bit more water in the middle to ensure the coffee grounds in the center receive enough water.

Serving size: It is generally recommended to use 15 g for a three-hole dripper to brew 150 c.c. of coffee. So does that mean to brew 300 c.c. you need 30 g, and for 450 c.c. you need 45 g? The answer is no. The concentration of pour-over is related to flow rate and the time water stays in the coffee grounds. Because the more cups you brew, the more grounds there are and the thicker the layer, the longer water stays in the grounds, and the better the extraction efficiency. Conversely, the more grounds there are, the same pouring water column flow rate will result in a slower flow rate. So when brewing more cups, you can reduce the amount of grounds and increase the water column.

"Roast Level"

Light roast: Light-roasted beans usually do not expand and bubble very well after contact with hot water, and light-roasted beans have a denser texture and tend to sink during brewing, making the surface thin. Similarly, this affects the flow rate, so it is generally recommended to use a high temperature above 90°C for light-roasted beans and a smaller water column, which makes it easier to extract the flavor.

Dark roast: Dark-roasted beans have a much looser texture, absorb water well, the grounds expand easily when watered, and the coffee grounds tend to float on the surface; however, the burnt bitter taste is also relatively stronger. The advantage of dark-roasted beans lies in their body and good coffee oils, which can be expressed at 88–90°C.

Therefore, the recommendations for roast level and temperature are as follows:

Light roast: Temperature about 90–93°C; after the water comes to a boil, pour it into the copper kettle and it is ready for brewing.

Medium roast to medium-dark: Temperature about 80–85°C.

Dark roast: Temperature about 88–90°C.

"Freshness"

In addition to changes in the coffee's own flavor, for pour-over, freshness makes an obvious difference in how the coffee grounds expand and bubble when hit with hot water. The fresher the roasted beans, the better the bubbling; beans that have been left at room temperature for more than two weeks after roasting do not bubble as well. When bubbling is poor, you can consider using a smaller water column to increase the time water stays in the grounds, which helps extract the flavor. However, it is still not recommended to drink stale beans.

[Adjusting Variables by Taste]

"Adjust by taste / without changing coffee grind size": Adjust water temperature.

1. If the coffee tastes burnt, astringent, or clearly bitter and the taste lingers for a long time, it means the water temperature is too high.

2. If the coffee tastes very astringent, with a strong grassy smell, as if the coffee is not cooked through (not fully extracted), it means the water temperature is too low.

"Adjust by taste / without changing water temperature": Adjust grind size.

1. If the coffee tastes burnt, astringent, or clearly bitter, it means the grind is too fine.

2. If the coffee tastes like nothing much, all very weak, it means the grind is too coarse.
