The Coffea genus contains a wide variety of species, but the world of specialty coffee is dominated by high-altitude Arabica. From Ethiopia's ancient Typica and Yemen's Bourbon, to naturally mutated varieties such as Bourbon Pointu, Maragogype, and Geisha, and further to cultivated selections like Caturra and Pacas as well as interspecific hybrids, every name conceals a story of migration and flavor. This article systematically outlines the main variety classifications of specialty Arabica, their origins, and cupping performance, and explains why hybrid varieties rarely appear in the product lines of specialty coffee suppliers such as Front Street Coffee. Whether you are a newcomer or a seasoned enthusiast, this variety map will help you understand more clearly where the flavors in your cup come from.

In plant taxonomy, coffee belongs to the genus Coffea under the family Rubiaceae, and this genus contains at least one hundred species.

I once published a post titled "Falling in Love with Specialty Coffee" in the "Healthy Life" section, in which I mentioned that the most common coffees on the market fall into two major categories: Arabica (known for its elegant flavors and the core mainstay of specialty coffee) and Robusta (also known as robusta bean, with rough flavors and higher caffeine concentration, not belonging to the category of specialty coffee).

In addition to these two mainstream categories, there are two smaller categories: Liberica (tall in tree form, mainly distributed in Malaysia and West Africa) and Excelsa; however, these two categories are extremely rare on the market, and even their formal Chinese translations are difficult to find.

Under Arabica there are also numerous subspecies, all of which were derived after the oldest Ethiopian Typica and Yemeni Bourbon were introduced to Central and South America or Asia and then underwent mutations; the number of varieties is enormous and difficult to list one by one. However, what specialty coffee focuses on is mainly carefully cultivated high-altitude Arabica, so the types are relatively limited. They can roughly be classified as follows.

Ancient native varieties:

Typica: This is Ethiopia's oldest native variety, and all Arabica varieties can be traced back to Typica. Typica's terminal bud leaves are bronze-colored, and the beans are oval or slender-pointed; the flavor is elegant, but the plant is relatively weak, has poor disease resistance, and also produces low yields. Well-known estate coffees such as Jamaica Blue Mountain, Sumatra Mandheling, and Hawaii Kona all belong to the Typica family.

Bourbon: This is a variety produced after Typica was introduced to Yemen in the early period (prehistoric coffee period), and the bean shape changed from slender-pointed to round. In 1715, the French introduced the round-bodied Yemen Mocha bean to Bourbon Island off the east coast of Africa (after the French Revolution the island was renamed Reunion Island), and only afterward was it named "Bourbon." In 1727, the round-bodied Bourbon bean then made its way to Brazil and Central and South America; in 1732, the British introduced Yemen Mocha to Saint Helena Island (the later place where Napoleon was imprisoned), which also belonged to the round-bodied Bourbon bean. Bourbon repeatedly wins championships in American specialty coffee cupping.

Typica's terminal bud leaves are bronze-colored, which is one of its identifying characteristics.

Gene mutation varieties:

Bourbon Pointu: Discovered in 1810 on Bourbon Island, its bean shape mutated from round-bodied to pointed, and its caffeine content is only half that of ordinary varieties; however, its yield is scarce and the plant is frail, making it extremely precious (mostly cultivated in laboratories).

Maragogype (also known as Elephant Bean): This is Typica's most famous mutation, first discovered in 1870 in the Maragogype coffee-producing area of Bahia state in northeastern Brazil. The bean size is at least three times that of ordinary Arabica, hence the name. Maragogype performs poorly in low-altitude areas, but under high-altitude conditions its flavor is better, with mild acidity and pleasant sweet aroma.

Geisha: A derivative variety belonging to the Typica family, exported in 1931 from Geisha Mountain in southern Ethiopia (Geisha is pronounced the same as the Japanese word for "geisha"), after which it remained obscure in many countries until it was introduced to Panama in the 1960s, and only from 2005 onward did it begin frequently winning cupping competitions.

Kenya "SL28" and "SL34": Direct Bourbon-line varieties selected and cultivated in Kenya by French and British missionaries and researchers in the early twentieth century. Over the past century they have adapted to Kenya's highly concentrated phosphoric acid soil, giving rise to Kenya's uniquely characteristic acidic aroma; top Kenyan coffees all come from these two varieties, but after being introduced elsewhere their flavor immediately deteriorates.

Yellow Bourbon (Bourbon Amarello, also known as Yellow Bourbon): This is a Bourbon mutation unique to Sao Paulo state in Brazil; after the fruit ripens it does not turn red, but instead appears orange-yellow. It was later discovered that other local Bourbon-derived varieties also exhibit yellowing of the fruit skin.

Caturra: A single-gene mutation of Bourbon, discovered in Brazil in the 1950s. Its growth vigor and disease resistance are both superior to Bourbon, and it does not require shade trees; its flavor is comparable to or slightly inferior to Bourbon.

Pacas: A Bourbon mutation discovered in El Salvador. In 1935, Salvadoran coffee farmer Pacas introduced the renowned Bourbon variety, and by 1956 he discovered that its fruit yield was higher than that of other coffee trees of the same species. After expert appraisal, it was confirmed that a gene mutation had occurred.

Villa Sarchi: A Bourbon mutation first discovered in Costa Rica in the 1960s, and in recent years it has often appeared on excellent cupping lists.

Intraspecific Hybrid within Arabica:

Mundo Novo: A variety naturally crossed from Bourbon and Sumatra Typica, first discovered in Brazil. High yield, resistant to pests and diseases, extensively planted in Brazil in the 1950s, and hailed as the new hope of Brazil's coffee industry; however, the tree is relatively tall, making harvesting inconvenient.

Catuai: A hybrid of Mundo Novo and Caturra; the tree is short and highly wind-resistant, but the flavor is relatively monotonous.

Pacamara: A hybrid of Pacas and Maragogype, with large beans second only to Maragogype. It is an excellent variety cultivated in El Salvador in the 1950s, and in recent years its cupping results have been impressive.

Kent: A Typica hybrid variety discovered in India, with high yield and strong disease resistance, but it has never achieved excellent results in cupping.

Interspecific Hybrid between Arabica and Robusta:

Timor: A natural hybrid variety discovered in East Timor, with 44 chromosomes, relatively close to Arabica; however, its flavor is plain and unremarkable.

Catimor: In 1959, the Portuguese crossed Brazilian Caturra with Timor to cultivate the highly disease-resistant Catimor. However, its flavor is also relatively poor, and it is currently an important variety for commercial beans.

Icatu: A variety improved in Brazil through multiple generations of hybridization, and it once entered the top ten of Brazil's "Cup of Excellence."

Ruiru 11: A hybrid variety developed in Kenya in 1985 that emphasizes yield over quality.

Among hybrids of Arabica and Robusta, there is still none that can be called specialty coffee; therefore, many suppliers specializing in fresh-roasted specialty coffee, such as Front Street Coffee, do not include these types. However, many importers of famous coffees do mix such hybrid beans into blends to reduce costs.

In addition, the flavor of the aforementioned gene mutation varieties (whether naturally occurring or the product of research) is closely related to specific regional conditions. Even within the same country, coffee beans from different estates may differ greatly. For example, the Jamaica national treasure Wallenford Estate Blue Mountain is more than twice as expensive as Jamaica Prime Highland Blue Mountain.
