How did coffee seeds evolve in Yunnan's growing regions?

Yunnan's coffee story began in 1904, when a French missionary planted the first Typica tree in Zhukula Village, Binchuan County. That single introduction became the foundation of an industry that now centers on Pu'er and Baoshan. Over more than a century, the dominant variety shifted from Typica to Catimor, and 24 century-old trees from that original planting still survive in the village.

Pu'er holds the highest coffee production in Yunnan and hosts purchasing operations for international buyers such as Nestlé and Starbucks, making it the easiest entry point for a first visit. As typica coffee gave way to higher-yielding Catimor, processing methods also changed. Records from two beans, Yunnan Huaguoshan and Yunnan Typica, show how cupping and brewing reflect those shifts.

Yunnan is a coffee-producing region that cannot be overlooked on China's coffee map, and Typica is the most representative variety of this land. From 1904, when a French missionary planted the first Typica tree in Zhukula Village, to today, when Catimor has become the main cultivated variety, Yunnan Typica coffee has undergone a fascinating evolution. This article will follow the two major producing regions of Pu'er and Baoshan to sort out the origin, variety replacement, and processing methods of Yunnan Typica coffee, while also presenting Front Street Coffee's cupping and brewing records for two beans, Yunnan Huaguoshan and Yunnan Typica, to help readers build a systematic understanding of Yunnan coffee.

When talking about Chinese coffee, Zhukula is a name that cannot be avoided; it is regarded as the first foothold of coffee in China. In 1904, French missionary Tian Deneng traveled over mountains and rivers to Zhukula Village in Binchuan County to preach, built a Catholic church there, and planted the first coffee seedling in China in front of the church. More than a hundred years later, Zhukula coffee is called the "living fossil of coffee" on the Tea Horse Ancient Road. Today, the village still retains coffee trees planted by Father Tian back then, and through natural propagation, 24 century-old ancient coffee trees still survive. The flavors carried by these trees have also become part of Chinese coffee history.

Zhukula is a holy land in the hearts of many coffee lovers, but getting there is not easy. The mountain roads are rugged and steep, and only experienced local masters can drive in during the dry season. At present, Zhukula coffee is mostly sold externally as local roasted beans and derivative products, and in recent years it has also begun to receive coffee pilgrims who come attracted by its fame in the form of tourism.

If you are stepping into a Yunnan coffee-producing region for the first time, it is recommended to start with Pu'er.

Pu'er is the region with the highest coffee production in Yunnan, and the purchasing headquarters of international companies such as Nestlé and Starbucks are all located here. For first-time visitors, it is also the lowest-threshold destination: convenient transportation, mature urban supporting facilities, visitable estates, coffee-themed hotels, and large-scale cafés are all available. Because the business formats are richly layered, everyone from ordinary enthusiasts to large buyers can find what they need here. It is also common to run into industry veterans in cafés.

Must-visit destinations in Pu'er

Yunnan Coffee Exchange: worth a special trip, as the Yunnan Green Coffee Bean Competition is held here, and you might run into former SCA chairman Ted Lingle around the corner of the stairs. Coffee information circulates extremely quickly here, so it is recommended to set aside at least one morning to quickly build up your conceptual framework for Yunnan coffee.

Nestlé Coffee Center: a 30,000-square-meter green bean testing and warehousing center opened in 2016, very worth a visit (if someone can take you in, do not miss it). Through the glass, you can observe Nestlé Coffee's green bean testing process, two rows of Probat sample roasters, a cupping table costing more than 100,000, and meticulous management details, which are a great learning opportunity for roasters.

Large-scale coffee planting in Baoshan began in the Lujiangba area as early as 1955, with a long planting history and rich stories. When early specialty coffee people searched for Yunnan specialty coffee, most of them came to this area, and the cooperative estates of the earliest batch of specialty coffee companies from Japan, Taiwan, and China were all looking for bean sources here.

In Baoshan, coffee fields are right outside the door. Unlike urbanized Pu'er, where you need to drive dozens of kilometers to see coffee, staying in Lujiangba, a few steps will take you into a coffee garden, and the trees planted around farmhouse courtyards are also coffee trees. Among the coffee farmers, besides local Yunnan people, there are also a group of Taiwanese friends who came because of coffee and later simply settled in Yunnan. The culture of small but refined coffee estates is easier to find here. However, Baoshan is more like a reclusive farmer, relying more on repeat purchases from regular customers, and its commercialization concentration is not as high as Pu'er. Therefore, in Baoshan, if you have an introduction from an acquaintance, it is easier to buy good beans. Old varieties such as Bourbon and Typica can also be found concentrated in this area. Fan Qizuo, a coffee farmer who persists here, is one of the representative figures of the region and is also an elder brother known to many growers and specialty coffee buyers. His coffee appears in the product lines of multiple domestic specialty coffee brands.

The origin of Yunnan Typica coffee

The history of Yunnan Typica coffee can be traced back to 1904, when French missionary Tian Deneng brought coffee seeds (Typica) from Vietnam into Yunnan and successfully planted them in Zhugula Village, Binchuan County. This is regarded as the beginning of Yunnan coffee and is generally called Typica coffee, commonly known in China as Yunnan Typica coffee. Typica coffee refers to Arabica coffee beans. Because the beans are smaller, it is also called small-fruit coffee; Robusta coffee is called medium-fruit coffee, and Liberica belongs to large-fruit coffee. What is grown in Yunnan is precisely Arabica coffee, so it is also called Yunnan Typica coffee.

Typica Typica coffee

Yunnan's Typica coffee was initially dominated by Typica. Because Typica has weak disease resistance and is susceptible to leaf rust, its growth condition must be watched at all times, and every leaf must be carefully cared for. In addition, Typica has low yield, so another variety was added to Yunnan Typica coffee: Catimor. Catimor is a combination of Arabica and Robusta. Robusta has good resistance to leaf rust and rich oils, high yield, and is easy to cultivate. After hybridizing with the Arabica variety Typica, Catimor carries 25% Robusta genes, which not only improves resistance to leaf rust and retains rich oils, but also inherits some of the flavor of the original Typica variety. As a result, most Yunnan estates began planting Catimor on a large scale, and the cultivation range of Typica gradually shrank.

Catimor Typica coffee

The coffee varieties currently mainly cultivated in Yunnan include Catimor, Typica, Bourbon, Caturra, Catuai, and others, but almost all seen on the market are Catimor. Therefore, what is now called Yunnan Typica coffee refers to Yunnan Catimor.

In 1959, the Portuguese moved the Brazilian Bourbon mutation Caturra to East Timor and crossed it with Timor, which carries Robusta bloodline, successfully cultivating Catimor with super strong disease resistance and productivity. Because leaf rust affected coffee-producing countries around the world, with the assistance of international organizations, producing countries vigorously promoted Catimor to resist leaf rust and increase productivity. Typica coffee is suitable for growing on mountain areas at an altitude of 800–1800 meters; too high an altitude makes it sour, too low makes it bitter. Most Typica coffee is planted in dry-hot valley areas at an altitude of about 1100 meters, so the acidity is moderate, and the aroma is rich and mellow. Many areas in Yunnan have unique environments suitable for the growth of Typica coffee, and the Typica coffee produced is of excellent quality.

Yunnan coffee bean processing methods

Due to the year-round rainy season and unstable climate, most Yunnan coffee beans are processed by the washed method. After harvesting, people send the cherries directly to the pulper (when the harvesting work has been done well), or gather them into a siphon tank filled with water. The cherries are washed and separated in the tank. Stones sink to the bottom of the tank and are picked out by hand when the tank is emptied. Lighter cherries float on the surface of the water and are removed with a skimmer together with leaves and small twigs. Cherries suspended in the water body are then recovered with a siphon tube and transported to the pulper.
