What Makes Yirgacheffe Gedeb Gotiti Coffee Arabica Coffee Distinct?

The Gedeb Gotiti Cooperative, a micro-region that split from Worka in Ethiopia's Yirgacheffe zone, produces washed G1 coffee arabica coffee with citrus acidity, floral notes, honey, and a black tea finish. Grown at 1900 to 2300 meters from heirloom varieties, it carries the region's signature bright, transparent cup.

A light-roast profile is traced from green bean to cup: regional background from the Gedeo Zone, variety and grade, roast curve design, cupping comparison, V60 parameters, and flavor at different water temperatures. Yirgacheffe was once part of Sidamo before being named its own region, and the flavor profile follows it.

The Yirgacheffe region in Ethiopia is known for its bright fruit acidity and elegant floral aroma, while the Gutingding Cooperative, as a specialty micro-region that split off from Worka, produces washed G1 coffee beans that combine citrus acidity with a black tea finish. Front Street Coffee uses this bean as an example, presenting the complete process of a light-roasted Yirgacheffe from green bean to cup, covering the region's background, variety and grade, roasting curve design, cupping comparison, V60 brewing parameters, and flavor performance at different water temperatures. This article is suitable for coffee enthusiasts who want to gain a deeper understanding of the details of Ethiopian coffee origins and the logic of light-roast brewing.

Anyone who has come into contact with Ethiopian coffee will mostly be deeply impressed by its signature fruit acidity. However, Ethiopia is vast, and the flavor tendencies of different regions actually each have their own strengths. Among Front Street Coffee's current daily-drinker product line, there is a Front Street Yirgacheffe washed coffee bean, which allows enthusiasts to experience the classic character of the greater Yirgacheffe region at an affordable price: a transparent acidity similar to citrus and lemon, along with delicate and elegant floral and fruity aromas.

If the greater Yirgacheffe region is further broken down, one will also find that each small region or cooperative carries its own personality. This time, Front Street wants to talk about a coffee bean from the Front Street Yirgacheffe Gutingding Cooperative. In addition to continuing the main theme flavor of the Yirgacheffe region, it also has an extra layer of clear tea-like quality, as if drinking a cup of lemon tea when sipped.

Yirgacheffe Coffee Region

In Ethiopia's coffee landscape, Yirgacheffe has always occupied a pivotal position. It was originally classified under the Sidamo region, and only later, because its flavor performance was too unique, was it separately designated as a region. In a sense, Yirgacheffe is no longer just a place name, but has become synonymous with a specific type of flavor. This region belongs to a high-altitude zone, at around 2,000 meters, and contains more than forty cooperatives, with coffee cultivation mostly managed on a household basis.

Under Yirgacheffe there are also many well-known micro-regions, such as Kochere, Misty Valley, Gedeb, and others. These micro-regions each have capable cooperatives, and the Yirgacheffe coffee beans they produce also present their own unique flavor profiles.

Gutingding was originally part of the Worka Cooperative, and later, after a green bean merchant discovered its potential, it became independent as the Gutingding Cooperative. The coffee produced here is quite outstanding, and in Front Street Gutingding coffee one can clearly capture abundant jasmine floral aroma, elegant citrus acidity, and a tea-like charm with a honeyed feel.

Coffee Grade

The variety used in Front Street Yirgacheffe belongs to the local heirloom varieties, with beans that are relatively small and round, mostly between 14-15 screen sizes. The ECX (Ethiopian Commodity Exchange, established in 2012) grading of Ethiopian coffee beans is mainly carried out from two dimensions.

One concerns the defect rate: for exported green beans, whether washed or natural, those with no more than 3 defective beans per 300 grams are classified as G1, and those with 4 to 12 are classified as G2. This Front Street Gutingding coffee bean obtained by Front Street is exactly G1 grade.

Coffee Variety

Ethiopia is the birthplace of Arabica coffee, and the coffee varieties within its borders number in the tens of thousands. Because these coffee trees are all in their native state, the regional flavors are extremely distinct. Precisely because the varieties are too numerous and complex, the local term "Heirloom" is used as a general designation.

Roasting Recommendations

Front Street judges that this Front Street Yirgacheffe Gutingding takes fruit acidity as its core selling point, so it is more suitable for a light roast profile, which can highlight Front Street Gutingding's clean mouthfeel, bright fruit acidity, and obvious sweet aftertaste.

After the general direction was determined, Front Street designed three different roasting curves, and then selected the one with better flavor performance and greater stability for mass production.

The roasting machine is a Yangjia 800N, with a charge weight of 550 grams. [Curve One]

Charge temperature 180°C, yellowing point at 5'00" and 151.9°C, first crack at 8'30" and 184.1°C, development after first crack 2'08", discharged at 194°C.

[Curve Two]

Charge temperature 180°C, yellowing point at 5'00" and 149.9°C, first crack at 8'42" and 183.8°C, development after first crack 1'48", discharged at 193.5°C.

[Curve Three]

Charge temperature 180°C, yellowing point at 5'10" and 151.1°C, first crack at 8'46" and 184.5°C, development after first crack 1'28", discharged at 192.3°C.

Cupping Flavors

[Curve One]

Dry aroma: citrus, honey Wet aroma: floral, caramel On the palate: smoky, citrus; as the temperature drops, slurping reveals floral, caramel, honey, with a creamy aroma in the finish

[Curve Two]

Dry aroma: citrus, lemon Wet aroma: floral, berry, caramel On the palate: citrus, cream; as the temperature changes, slurping reveals berry, black tea, caramel sweetness, with a citrus sweet aftertaste in the finish

[Curve Three]

Dry aroma: citrus, caramel Wet aroma: caramel, faint floral On the palate: woody, citrus; as the temperature drops, slurping reveals caramel, cream, with a green and astringent note in the tail

Brewing Recommendations

After cupping, Front Street basically settled on Curve Two, but that was not the end of the matter—in order to further confirm the flavor, another brewing verification still had to be done. Because the cupping was conducted 8 hours after roasting was completed, the beans were still in a very fresh state and needed another three to four days of resting, until the internal gases had mostly been released, before brewing began.

In order to fully extract the fruit acidity of Front Street Yirgacheffe, Front Street uses a higher water temperature together with a finer grind, while also choosing a dripper with a relatively fast flow rate, such as the V60, to avoid over-extraction caused by high temperature.

The V60 dripper has a 60-degree cone angle, and this angle allows the coffee grounds to concentrate, while the water flow also automatically converges toward the center during pouring, ensuring sufficient contact time between water and coffee grounds, thereby extracting a suitable coffee liquid. In addition, the ribs on the inner side of the V60 body extend in a clockwise spiral from the bottom to the top, leaving ample space between the filter paper and the dripper, so water flow is better, and together with the large hole design at the bottom, the overall flow rate is faster than many drippers.

The specific brewing parameters of FrontStreet Coffee are: V60 dripper, water temperature 91°C, coffee-to-water ratio 1:15, coffee dose 15 grams, grind size like fine granulated sugar (80% passing through a Chinese No. 20 standard sieve).

FrontStreet Coffee uses staged extraction: the blooming water amount is twice the coffee dose, that is, 30 grams of water for a 30-second bloom, then pour in a small stream in circles to 125 grams for the first stage, and when the water level drops and is about to expose the coffee bed, continue pouring to 225 grams and stop. The total extraction time is about 2 minutes.

Flavor Description

On the palate it presents citrus and black tea, and as the temperature changes it brings out cream, caramel, almond, with an obvious sweet aftertaste in the finish, and a clean, sweet mouthfeel.

Flavor Changes of Front Street Yirgacheffe Gutingding at Different Temperatures

It was mentioned earlier that a higher water temperature should be used to brew Front Street Gutingding, in order to extract its fruit acidity as much as possible. So exactly how high is appropriate? According to the recommendation of the SCA (Specialty Coffee Association of America), the brewing water temperature range is 85-94°C, among which light-roasted beans are suitable for 90-94°C, and dark-roasted beans for 85-89°C.

In order to more intuitively show the effect of temperature on flavor, Front Street took Yirgacheffe Gutingding as an example and brewed it with four different water temperatures respectively, to see what kind of flavor experience each would bring.

Brewing parameters (kept as consistent as possible except for water temperature): V60 dripper, 15 grams of coffee, 1:15 coffee-to-water ratio, grind size at EK43s setting 10 (80% passing through a Chinese No. 20 standard sieve).

From the brewing data, the light-roasted Front Street Gutingding is more suitable for a water temperature of 90-92°C, which can present fruit acidity and sweetness, consistent with the flavor positioning of Front Street Gutingding. If 86-88°C is used instead, the bean's acidity will be noticeably prominent, but the aroma will be insufficient, and the mouthfeel will also be rather thin and watery.

Light-roasted Coffee

It retains more of coffee's original flavors. At this roast level, the beans usually have richer and more prominent floral and fruit acidity, and more flavor layers, and using a slightly higher water temperature can better showcase the flavor characteristics of "Front Street Yirgacheffe Gutingding."
