What Makes Mandheling Coffee From Aceh Distinct

Mandheling is the representative coffee of Indonesia, and Tiger Mandheling, named after the Sumatran tiger, comes from the Aceh region at the northern tip of Sumatra. It is grown at around 1500 meters using Typica and Caturra varieties, processed by the wet-hulling method, and known for agarwood and pine notes with a heavy body.

Aceh has become an important Mandheling producing area, and in recent years its quality and output have surpassed the Lintong region. Aceh's Lake Tawar and Lintong's Lake Toba are often called the two lakes, two Mandhelings. For drinkers who prefer low-acid arabica beans, Mandheling offers a rich mouthfeel with relatively few defective beans after screening.

Sumatra Mandheling is the representative of Indonesian coffee, and Tiger Mandheling, named after the Sumatran tiger, has both a producing-region story and a rigorous selection process behind it. This article starts from the Aceh producing region, sorting out Tiger Mandheling's varieties, wet-hulling process, and flavor characteristics, and shares Front Street Coffee's roasting curve, cupping performance, and Kono dripper brewing parameters, helping enthusiasts understand this coffee's agarwood and pine notes and high body, while also mentioning the origin imagery and brand associations commonly found on Starbucks Sumatra packaging.

When it comes to Indonesian coffee beans, many people first think of Sumatra Mandheling. If you are just getting started, Front Street Lintong Mandheling is a good entry choice, allowing you to experience the classic taste of Indonesian Arabica beans; if you want to drink a higher grade, you can choose Front Street PWN Golden Mandheling, which after multiple rounds of screening has very few defective beans, preserving a rich mouthfeel while also maintaining cleanliness, making it very suitable for friends who prefer low-acid coffee.

Among Sumatran coffees, there is a category with a faint, elusive connection to the Sumatran tiger, and this is the protagonist Front Street is talking about today—Tiger Mandheling coffee (Sumatran Tiger · Mandheling).

Sumatra · Aceh producing region

Aceh is an important producing area for Mandheling coffee, located at the northernmost tip of Sumatra island. In the past, an independence movement emerged due to religious issues, and afterward the Aceh local armed government made concessions, no longer seeking independence and instead existing as a special region; in recent years the situation has been stable, which has also given the local coffee industry better room for development. Aceh's Lake Tawar and Lintong's Lake Toba are often jointly called the "two lakes, two Mandhelings," and in recent years the quality and output of Aceh Mandheling have even surpassed the Lintong producing area, so much so that Indonesia's largest green bean trader, Pawani, has also shifted its focus to Aceh.

Why is it called Tiger Mandheling?

The Sumatran tiger is a representative animal of Indonesia and is now on the verge of extinction. In people's impressions, the Sumatran tiger is always majestic and composed. Tiger Mandheling happens to come from the Sumatran tiger's homeland—Sumatra island. This bean is made from 19-mesh coffee cherries (the coffee cherries must be strictly filtered through a 19-mesh screen, trying to make each bean's diameter as close to the same as possible), and then after three rounds of hand sorting to remove unripe cherries, it enters the green bean processing stage, so locals use "Sumatran tiger" to describe the preciousness and rarity of this 19-mesh selected bean. In Front Street's cupping, this coffee has high viscosity, a smooth mouthfeel, rich agarwood notes, and high sweetness, with a long sweet aftertaste on the palate, easily bringing to mind the image of a Sumatran tiger crouching and creeping along the ground.

The most prominent feature of Tiger Mandheling is that it has special aromas such as pine and agarwood, which other Mandheling coffees do not have.

Coffee bean varieties

This Tiger Mandheling uses two varieties with obvious sweetness: Typica and Caturra. Typica has bronze-colored tips, oval or slender-pointed beans, and elegant flavor, but the plant is relatively weak, has poor disease resistance, and also produces little fruit. Front Street Coffee (FrontStreet Coffee) has cupped Typica from multiple producing regions, and its distinctive quiet, clean flavor and balanced characteristics can all be expressed. Caturra is a Bourbon mutation; the coffee bean has a curved tail end, a round and slender shape, and better productivity and disease resistance than Bourbon, with an overall bright flavor and good sweetness performance as well.

Wet-hulled process

The wet-hulled process first removes the skin and pulp of the coffee cherry, then after brief fermentation it is dried, then the mucilage and parchment layer are removed, and drying continues in the later stage until the moisture content drops to 12%. Wet-hulled Mandheling coffee beans often clearly show varying degrees of crushing cracking (this kind of bean is horseshoe-shaped, so it is also called horse bean), and the bean color tends toward dark blue-green.

This method compresses the drying time to two to four days, shortens the coffee bean fermentation period, and greatly lowers the acidity accordingly; relatively speaking, the body increases, caramel and fruity aromas become more obvious, and it even carries herbal or grassy notes as well as woody aromas, thus forming Sumatra's unique regional flavor.

Front Street Coffee (FrontStreet Coffee) roasting analysis

Front Street's roaster observed that Tiger Mandheling green beans are round, yellow-green, fairly uniform, and relatively high in moisture content. The roasting target is set at medium-dark roast, used to wipe away excess acidity and enhance body and balance.

When the drum temperature rises to 200°C, charge the beans, set the air damper to 3, after 30 seconds adjust the heat to 160°C, keep the air damper unchanged, turning point at 1'45, maintain the heat, at 5'18 the bean surface turns yellow, the grassy smell completely disappears, entering the dehydration stage, lower the heat to 140°C, adjust the air damper to 4;

At 7'30" dehydration is complete, lower the heat to 140°C, at 8'55" the bean surface shows ugly wrinkles and dark streaks, and the toast aroma clearly turns into coffee aroma, which can be defined as the prelude to first crack; at this time you must listen clearly for the sound of first crack, and at 9'00" first crack begins, reduce the heat to 110°C, open the air damper fully to 5 (adjusting the heat must be very careful, not so low that there is no cracking sound), after first crack develop for 4'00", discharge at 203°C.

Front Street Coffee (FrontStreet Coffee) brewing sharing

For coffee beans with a darker roast level, in order to highlight the coffee's rich body, Front Street Coffee (FrontStreet Coffee) chooses the Kono dripper for brewing. The Kono dripper's characteristic is that it has an immersion function, which can use immersion to extract more coffee substances and enhance the rich mouthfeel. The Kono dripper has few ribs and they are located at the bottom, which allows the filter paper to cling tightly to the dripper to achieve the effect of restricting airflow, thereby slowing the water flow rate and increasing the contact time between water and coffee grounds.

Parameters

Dripper: Kono Meimon

Dose: 15g

Coffee-to-water ratio: 1:15

Water temperature: 88°C

Grind size: medium-coarse grind (about 73% passing through a 0.85mm standard sieve)

Front Street Coffee (FrontStreet Coffee) uses staged extraction, using 30g of water for a 30-second bloom, then pouring in a small stream in circles until 125g for the stage break, and when the water level drops and is about to expose the coffee bed, continue pouring until 225g and stop pouring; when the water level drops and is about to expose the coffee bed, remove the dripper, (timing starts from the beginning of the bloom) with an extraction time of 2'05".

Brewed flavor: nuts, cream, dark chocolate, caramel, Chinese herbal medicine, obvious sweetness, and a relatively clean, clear flavor.
