Moka pots also come in single-valve anddual-valvetypes(there are even three-valve ones). A dual-valve moka pot can producemore coffee crema than a single-valve one. Dual-valve means that on the basis of the single valve, a pressure-collecting valve is added to the hollow tube. This pressure-collecting valve normally blocks the small hole in the hollow tube where coffee liquid comes out, requiring higher steam pressure to push it upward and let the coffee liquid spray out. The coffee flavor brewed by single-valve and dual-valve is also different, because the dual-valve has higher extraction pressure, making it easier to produce high-concentration coffee with a more concentrated taste, and its crema is also thicker.
Interestingly, because the moka pot is often placed on a flame for heating and uses steam pressure for extraction, it is also called a direct-flame espresso pot.

The advantages and disadvantages of the moka pot

The principle of moka pot coffee extraction
Moka pot extraction uses the steam pressure generated inside the lower pot (about 1.5-3.0 atmospheres of pressure). When the steam pressure is large enough to penetrate the coffee grounds, it pushes hot water up to the upper pot. On the way to the upper pot, the hot water passes through the coffee grounds in the filter and very quickly extracts the essence of the coffee. [Brewing method]
(1) First pour hot water into the lower pot(if you have hot water, use hot water; if not, cold water is also fine).
(2) Put the coffee grounds into the filter basket, filling it to about 9/10 full, and gently tap the edges so the coffee grounds are compact and level.

(3) Tighten the upper and lower pots to prevent coffee liquid from overflowing during the process.
(4) Place the moka pot on a small gas burner or induction cooker to heat. Start with medium heat, and when you hear a hissing sound, turn the heat to low, and the coffee will naturally flow out slowly.

(5) When the sound turns to a slight bubbling sound, turn off the heat to avoid over-extraction. The rich and aromatic coffee is then ready.
[Important reminders]
  (1) The moka pot belongs to the espresso brewing method, so the concentration is relatively high, and it usually needs to be diluted before drinking.
