Ethiopian specialty coffee region — Yirgacheffe

In the ancient language, “Yirga” means “to settle down,” and “cheffe” refers to “wetland,” so together it means “let us settle in this wetland.” Yirgacheffe is a small town in Ethiopia, at an altitude of between 1,700 and 2,100 meters, located on the northwest side of Sidamo Province, nestled among mountains and beside a lake. It is one of the highest coffee-producing regions in Ethiopia and an iconic name in the country’s specialty coffee. Strictly speaking, Yirgacheffe is a sub-region under Sidamo, separated out because of its distinctive flavor. In addition to the town of Yirgacheffe itself, this area also includes the surrounding sub-regions of Wenago, Kochere, and Gelena/Abaya.

In 1959, the Yirgacheffe region introduced the washed processing method originating from South America. After that, most regions commonly adopted the washed method, in which coffee cherries are depulped, then fermented and washed to remove the mucilage layer, and then dried. After 2006, coffee processing stations in some regions began using refined raised-bed natural processing. This labor-intensive raised-bed drying method keeps the coffee cherries from touching the ground throughout the process, preventing muddy off-flavors from being mixed in during sun drying, thus producing an especially clean fruit flavor. After more than two weeks of sun drying, the coffee cherries turn dark brown and are professionally stored, waiting for the flavor to fully mature. Before sale, the dried cherry pulp and parchment are removed, and underripe beans and over-fermented beans are sorted out. Strict quality control greatly improves the quality of natural beans.

The cooperative is located in the southern part of the Gedeb area. It was established in 2005 and joined the famous Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) in the same year, and is known for producing high-quality natural Yirgacheffe. The Woka Cooperative has about 300 coffee farmers. YCFCU was founded in 2002, and its members also include 26 other cooperatives, serving more than 45,000 coffee farmers.

The Woka Cooperative is affiliated with the YCFCU cooperative union organization. It was established in 2005 and is one of 22 primary cooperatives. The Woka Cooperative is located in the Gedeb area within the Gedeo administrative zone, a remote part of Yirgacheffe, 75 kilometers away from Dilla, the local coffee trading hub. The external road conditions are poor; from the cooperative to the paved main road there is a 20-kilometer dirt road. The local altitude is very high, about 1,800 to 1,900 meters. Because no chemical fertilizers or insecticides are used in coffee cultivation, Woka’s smallholders have also obtained Skal organic coffee certification recognized by the EU. Just as Kochere is known for washed coffee, Woka stands out especially for its natural process, though both Woka and Kochere have green beans processed by different methods. In recent years, the natural method has become increasingly refined, greatly improving the relatively rough traditional model used for centuries, with more attention to the harvesting of ripe cherries and care during the sun-drying process, allowing the beans to retain the sweetness of the fruit pulp, with a slight and charming fermented wine note, creating flavors that the washed method does not have.
