Front Street Coffee's naturally processed Sidamo Shakiso is an Ethiopian single-origin bean with rich layers of flavor. This article outlines the producing region background, cooperative growing conditions, green bean characteristics, and roasting performance. It also introduces the Operation Cherry Red mechanism that drives quality improvement. By understanding the high-altitude growing environment of the Kebado cooperative and the strict selection standards of Operation Cherry Red, readers can better appreciate why this bean presents complex notes of berries, tropical fruit, fermented wine aroma, and cocoa tea.

Kebado is a small coffee cooperative in a town within the Dara producing area of Sidamo Province. Each smallholder coffee farmer here owns an average planting area of about 0.6 hectares, and the group is made up of hundreds of farmers. The growing altitude is nearly 2,000 meters, with large temperature differences and fertile soil, providing an excellent growing environment. The green beans give off a rich aroma of raisins and fermented wine. Judging by the near yellowish-brown beans, they are not large in size and are slender, but when placed in the hand they feel quite solid in weight.

Operation Cherry Red is a small-scale farm quality improvement project led by the Dutch trading company Trabocca BV, with part of the funding sponsored by the Dutch government, beginning in 2005. This project, which strengthens the coffee production capacity and quality of remote areas in Ethiopia by providing producers with professional technical and related technological assistance, began in 2005 and selects high-altitude small coffee cooperatives in the current three regions of Sidamo, Yirgacheffe, and Limu. It encourages and assists producers to improve washed, semi-washed, natural, or other experimental processing methods as much as possible to enhance coffee quality, and ensures the quality of each batch through testing (professional cuppers are also stationed in the coffee producing areas to directly grasp the coffee flavor). Before the harvest season, Trabocca invites selected smallholder producer organizations/producers to participate in producing micro-batch coffee (about 1,500 to 3,000 kilograms), carefully hand-selecting 100% ripe red coffee cherries in multiple rounds (hence the name Operation Cherry Red). Trabocca provides financial loan support, new hardware equipment, and production and processing knowledge and technical assistance to farmers, and promises that as long as the actual output quality meets the cupping standards in the cupping rooms in Addis Ababa, Ethiopia, and Amsterdam, Netherlands, it will purchase at a premium price. This year, the passing standard set by Trabocca is 88 points. The beans from Operation Cherry Red are immediately packed in GrainPro bags or vacuum boxes in separate bags after processing at origin, and then transported to Djibouti to await shipping. Through real-time monitoring, safe transportation, and timely and appropriate handling methods, it strives to pursue perfect quality.
