As one of Ethiopia's most iconic specialty coffee beans, Yirgacheffe has always enjoyed immense popularity. Whether it's a seasoned coffee connoisseur who has been drinking for years or a complete beginner just getting started, everyone favors it. Why is Yirgacheffe so popular?

Let's first look at three Yirgacheffes with different styles:

Yirgacheffe natural processing method: After the fruit is picked, it is sun-dried without further processing. This is the oldest processing method still in existence. The drying process usually lasts about 4 weeks, and the method must be extremely rigorous to ensure the coffee loses none of its flavor. Natural process beans have a complete natural richness, gentle aroma, and more mucilage.

Washed processing uses washing and fermentation to remove the coffee's skin, pulp, and mucilage, washing the coffee beans until they are smooth and clean. After washing, the coffee beans are still wrapped in the parchment layer with a moisture content of 50%, and must be dried to reduce the moisture content to 12%, otherwise they will continue to ferment and become moldy and spoiled. The better processing method is to use sun drying. Although it takes 1 to 3 weeks, the flavor is excellent and it is quite popular.

Yirgacheffe Production Region Knowledge

Yirgacheffe does not represent a specific single coffee bean, but rather the name of a coffee production region, specifically including the small town of Yirgacheffe northwest of Sidamo Province in Ethiopia, and the three sub-regions surrounding the town: Wenago, Kochere, and Gelena Abaya. The production region is nestled by mountains and lakes with a beautiful environment, with an average altitude between 1,700 and 2,100 meters. It is one of the highest-altitude production regions in the world and is also synonymous with Ethiopian specialty coffee.

The Yirgacheffe production region is formed by surrounding coffee communities or cooperatives. The small mountain town is shrouded in mist year-round, with spring-like weather in all four seasons. In summer, gentle breezes blow, cool but not hot, rainy but not humid. In winter, there is no cold damage. This is what allows it to cultivate the unique terroir flavor of citrus and floral notes and the unpredictable terroir character that only garden coffee possesses.

Although the coffee beans produced in this area can all be called Yirgacheffe, there is no clear definition of its bean varieties. Because Ethiopia's coffee varieties are extremely complex, local coffee farmers use mixed planting and mixed harvesting methods, making it impossible to distinguish specific coffee varieties. Therefore, these coffee beans are collectively called Ethiopian Heirloom, and Yirgacheffe is mainly based on this heirloom coffee bean (in recent years, driven by CoE, single-variety micro-lots have also begun to appear in various Ethiopian production regions including Yirgacheffe, such as numbered varieties like 74110 and 74112).

Therefore, coffee beans produced by different estates in the Yirgacheffe production region also vary in bean size, which is likewise a characteristic of coffee beans from the Ethiopian region.

In addition to heirloom varieties, Yirgacheffe's unique flavor is also closely related to its geographical growing environment. High-altitude areas have a large temperature difference between day and night, which delays the growth rate of the coffee fruit, allowing the coffee beans to contain rich floral and fruity aromas and bright acidity, with a clean and smooth mouthfeel and distinct layers, forming the typical Yirgacheffe regional flavor.

In the earliest days, Yirgacheffe used the traditional natural processing method, but due to backward equipment and technology, the coffee beans could only be spread directly on the ground, easily absorbing the taste of soil and causing inconsistent quality. Later, the Ethiopian government introduced the washed processing method from Central and South America, which greatly improved the processing quality of Yirgacheffe coffee beans and made the flavors clearer and more defined. Washed coffee has a very clean and refreshing taste that is soft and smooth, with a distinctive floral aroma.
