What sets Panama Geisha coffee beans from these estates apart?

Panama Geisha coffee beans from Hacienda La Esmeralda grow on the slopes of Baru Mountain in western Panama at about 1,450 meters, graded SHB and refined washed. The cup shows oolong tea aroma, peach fragrance, honey sweetness, and bright fruit acidity that softens as it cools. Hacienda La Esperanza sits in Boquete at 1,400 to 1,600 meters and is organic certified.

La Esperanza grows Caturra, Catuai, and Typica, roasted at a medium CITY+ level, with nutty and berry notes, low gentle acidity, high sweetness, and a long finish. Its fruit profile and body are often compared to Baby Geisha and Sweet Geisha. The Esmeralda lot also carries Rainforest Alliance certification, a marker buyers use when comparing responsibly sourced green coffee.

Hacienda La Esperanza is situated at an altitude between 1400 and 1600 meters, with an annual production of approximately 300 to 700 bags. Most processing steps are completed on the farm, using washed processing followed by sun-drying, and the husks, pulp, and mucilage generated during processing are converted into fertilizer. The estate's planting ratio is approximately 60% Caturra, 20% Catuai, and 20% Typica and other varieties, with the most famous being Geisha, which won champion at the 2008 Best of Panama competition. The estate also plants a large number of native tree species as shade trees, while also providing nutrients to the soil, including orange trees and tropical fruits such as lemon and grapefruit. Within the estate's boundaries is a considerable area of tropical rainforest nature reserve, and it has at least three mountain wells with abundant water. The average annual rainfall reaches 3200mm, with daytime temperatures between 16 and 23 degrees, and nighttime temperatures between 14 and 20 degrees.

Hacienda La Esperanza differs from most estates in its management, employing a PhD-level botanist, three professional cuppers, and 100 full-time staff, currently managing six estates under its umbrella. The estate is owned by the Herrera brothers. In fact, the Herrera brothers' grandfather once operated a coffee farm in the Trujillo region of Colombia, which gradually declined, prompting the two brothers to leave Colombia. However, they never gave up their dream of returning home to run a coffee estate.

After returning home, the first estate Herrera purchased was La Esperanza in Trujillo, located very close to his grandfather's original farm, now used as the regional headquarters. The estate itself is 100% organic, growing coffee varieties including Colombian, Castillo, and Caturra, as well as over 14,000 organic Geisha trees. Subsequently, Herrera acquired four more estates in Trujillo and Caicedonia, north of Trujillo. Including the La Cardeida estate in Boquete, Panama, leased in 2005, the company now has six estates in total, with a total coffee planting area of 213 hectares.

The estates under Cafe Granja La Esperanza are distributed across eight unique microclimate production areas in three mountain ranges of Colombia, providing their botanists with excellent conditions to experiment with different microclimates and terroir flavors, different processing methods, and different coffee varieties, combining scientific rationality, business acumen, and a commitment to coffee quality. For example, they have developed different processing steps and specifications for different microclimates and varieties. From seedling cultivation to export, there are 95 data points to manage all information.

Chief botanist Hernando Tapasco's team has established climate stations on the estate to track weather data and assist in harvest decisions. Farm data is collected continuously and analyzed weekly. After harvest, they compare weather data, production data, and cupping data to analyze correlations. Geisha harvesters are strictly trained to pick only ripe cherries, paid by the day, which differs from other estates that pay by weight, avoiding workers picking substandard cherries to boost their performance. Half of the harvest workers have over six years of experience. After harvesting, the cherries are sent to the central processing plant at Hacienda La Esperanza, where each batch of Geisha is marked and processed separately. First, a three-day pre-drying stage is conducted on the drying patio, before being moved into small towers for drying. Strict quality control is another key factor. At Cerro Azul estate, there are 40,000 to 45,000 Geisha trees, of which only 5,000 to 7,000 produce Geisha beans worthy of bearing the Cerro Azul brand.

Hacienda La Esperanza's experimentation and innovation with varieties seems endless, constantly testing new varieties. In addition to the organic Caturra that originally occupied most of the area at Hacienda La Esperanza, they grow Geisha, organic Geisha, Mocha, Bourbon (including Red, Yellow, and Tekizik Bourbon), Pointed Bourbon, Pacamara, San Bernardo, and Pache. They truly bring the serious attitude of wineries toward grape varieties into coffee. After Geisha, the Pacamara, Bourbon, and even Pointed Bourbon produced by Hacienda La Esperanza continue to create surprises and admiration in the specialty coffee world.

Their approach has finally paid off. As early as the 2008 "Best of Panama" competition, La Cardeida, leased by Hacienda La Esperanza, won the Best of Panama championship with a score of 93.16. The 2012 Coffee of the Year Triple Crown was awarded to three estates currently primarily growing Geisha: Cerro Azul second, Las Margarita third, and Buenos Aires Experimental Estate seventh.
