Flavor Analysis of Six Classic Coffee Regions: A Buying Guide

June 14, 2021

Which Classic Coffee Regions Should Beginners Try First?

Six classic coffee regions split into two flavor camps. The acidity side covers Ethiopia, Kenya and Panama, with Yirgacheffe and Kenyan lots showing layered fruit and bright structure. The richness side covers Jamaica, Indonesia and Sumatra, where beans cup heavier and lower in acid. Each region is reviewed by background, grading, variety origin and processing method, so beginners can pick a direction before buying.

Most coffee grows inside the coffee belt, and a store stocking more than thirty single-origin beans lets drinkers compare regions side by side. That comparison matters more than any single recommendation: tasting an Ethiopian washed lot next to a Sumatran wet-hulled one builds flavor memory quickly. Beans rotate with each harvest season, so there is always a new region to try.

Faced with the dazzling array of coffee beans on the market, beginners often don't know where to start. Front Street Coffee stores display more than thirty single-origin beans from different regions year-round, updated by harvest season, with the goal of letting customers compare side by side and build their own flavor understanding. This article selects six representative beans that combine regional character with popularity, divided by flavor direction into two camps: prominent acidity and full-bodied richness. The three known for acidity come from Ethiopia, Kenya, and Panama, with varying layers of sourness; the three known for richness come from Jamaica, Indonesia, and Sumatra. Each bean will be discussed in terms of regional background, grading, variety origin, and processing method, to help you shop with more confidence.

More and more coffee brands are appearing, and friends who have just become interested in coffee often struggle with choosing beans. Front Street Coffee (FrontStreet Coffee) stores stock more than thirty coffee beans from different regions, each with a different flavor direction. Every new harvest season, Front Street Coffee (FrontStreet Coffee) replaces some of the beans, swapping in varieties that better fit the seasonal trends, putting thought into bean selection, with the fundamental goal of giving customers the chance to know coffee from more regions. Front Street Coffee (FrontStreet Coffee) hopes this exchange is two-way: coffee drinkers continuously expand their flavor memory bank, while Front Street Coffee (FrontStreet Coffee) also grows alongside them, constantly discovering quality beans from more regions so more people can drink good coffee.

Today Front Street Coffee (FrontStreet Coffee) has selected six popular single-origin beans with distinctive regional character to talk about. Based on flavor tendency, Front Street Coffee (FrontStreet Coffee) groups them into two paths: one known for acidity, the other winning on richness. Coffee beans represented by acidity 1. Front Street Ethiopia Yirgacheffe Red Cherry

Ethiopia is located in the eastern part of the African continent. The "Gedeo Zone" to which Yirgacheffe belongs is located within the "Southern Nations, Nationalities, and Peoples' Region (SNNPR)" in southwestern Ethiopia. Yirga cheffe is a small town in Ethiopia, at an altitude of 1,700-2,100 meters. It is one of the highest coffee-growing regions in the world and a byword for Ethiopian specialty coffee. Lake Turkana, Lake Abaya, and Lake Chamo bring abundant moisture here.

[Yirgacheffe Red Cherry Coffee Grade] ECX (Ethiopian Commodity Exchange) has defined grades for coffee beans based on defect rate, namely G1 and G2. G1 means fewer than 3 defective beans per 300g of green beans, and G2 means 4-12 defective beans per 300g of green beans. [Coffee Bean Variety] The variety of this coffee bean is heirloom. Most Ethiopian coffee varieties are named this way, actually because there are simply too many varieties. It is like a natural gene bank of Arabica: on one hand, the varieties are so numerous that identification and classification are difficult; on the other hand, the Ethiopian government, out of protection concerns, is unwilling and unable to disclose this variety information. However, Front Street Coffee (FrontStreet Coffee) found that in this year's COE competition held in Ethiopia, Ethiopian beans also began to have different variety names, all named with numbers. [Natural Processing Method] The natural processing method, also called the dry method, involves manually harvesting high-sugar coffee cherries and placing them on raised beds or open ground to dry in the sun. During drying, they need to be turned and stirred at appropriate times to avoid uneven drying or over-fermentation. After 2-4 weeks they are completely dried, until moisture content reaches 12%, then a huller is used to remove the pulp and skin.

[Red Cherry Project] The so-called Red Cherry actually refers to the Red Cherry Project, jointly initiated by the Dutch trader Trabocca and local farmers, aimed at improving the quality of small-scale farms. Picking coffee fruit requires not only picking fully red, highly ripe fruit, but also harvesting entirely by hand—yet this is only the most basic requirement. There are corresponding requirements for the coffee bean processing method as well. The Red Cherry Project is also a kind of reinforcement practice, making farms put more effort into the process of sorting and selecting beans. These coffees are also relatively more expensive. The main implementing regions include Yirgacheffe, Sidamo, Bonga Forest, Limu, Kembata, Illubabor, Harar, Limu, and others. These all have unique flavors that can fully showcase the flavor of Ethiopian coffee. But in fact, today's specialty coffee all operates coffee production using this Red Cherry Project approach; it's just that the term unique to Red Cherry coffee still belongs to Ethiopia. Red Cherry coffee output will have Trabocca printed on the jute bags.

[Aricha Estate] Each small coffee farmer at Aricha Estate has an average planting area of about 0.6 hectares, and it is composed of hundreds of coffee farmers. Its planting altitude is nearly 2,000 meters, with large temperature differences and fertile soil, providing an excellent growing environment. The green beans themselves give off a rich aroma of raisins and fermented wine. [Yirgacheffe Red Cherry Coffee Flavor Description] Lemon, licorice, citrus, berries, sweet orange; overall sweetness is relatively high, with a sweet aftertaste of caramel and cream, and a finish with black tea aroma.

2. Front Street Kenya Little Tomato

Kenya is also located in East Africa, adjacent to Ethiopia. Kenya's coffee development history is not as long as Ethiopia's; coffee was not introduced until close to the twentieth century. This journey almost circled the entire globe before bringing coffee back to Africa, and at that time the coffee world was undergoing new changes. Kenya happened to be a witness to and driver of this turning point. Unlike Ethiopia, Kenya's coffee was brought by the colonial power—Britain. During the colonial period, the authorities vigorously developed the coffee economy, and the entire system leaned toward refined management. Kenya's level in breeding, grading, and processing methods led many producing countries at the time. It was only decades later, when other countries also realized the benefits of refined management and followed suit, that Kenya's lone outstanding position gradually faded.

[Kenya Coffee Grade] Kenya grades by coffee bean size and cupping results. According to bean size, shape, and hardness, from high to low they are E, AA or AA+, AB, PB, C, TT, T. For AA and AB grade green beans, an additional special grading based on cupping results is added (not officially recognized by the Kenyan state, but set by exporters), from high to low: TOP, PLUS (+), FAQ. [Coffee Bean Variety] In 1922, Kenya established the Scott Agricultural Laboratories (Scott Labs) for coffee cultivation research. Over more than 10 years after its founding, the lab selected SL28 and SL34 from 42 coffee varieties as suitable for cultivation in the region, providing a good start for the coffee industry's development. SL28 and SL34 are both varieties screened after multiple rounds of breeding. SL28 belongs to the Bourbon genetic group, carrying the bright tone and rich acidity of the original Bourbon. SL34's lineage is closer to the Typica gene, with acidity milder than SL28. These two varieties, SL28 and SL34, currently account for ninety percent of Kenya's production. South America is also actively introducing SL28 as a planting variety.

[ K72 Washed Processing Method ] Kenya's washed method is world-famous, yet different from ordinary washed methods. Kenya's K72 processing method refers to a washed fermentation time of up to 72 hours. Ordinary washed processing rarely exceeds 36 hours. Such an extremely long fermentation time creates the distinctive acidity of Kenyan specialty coffee. The process is to first screen highly ripe coffee fruit, remove the skin and pulp, then soak in a fermentation tank to remove pectin. This process takes 72 hours, after which it is taken to dry until moisture content reaches 12%. [Kenya Asaliya Coffee Flavor Description] Cherry tomato and berry aroma, noticeably acidic on entry with a juicy feel, prominent sweetness in the middle, and a tea-like finish.

3. Front Street Panama Butterfly

Panama is a Central American country, bordering Costa Rica to the west and Colombia to the east. Panama coffee came to Panama with European immigrants in the 19th century. At that time Panama had already been independent from Spain for about 50 years, but as an agricultural product, Panama coffee did not truly gain a firm foothold until the past 20 years. In terms of climate, Panama is near the equator and has a tropical maritime climate, humid during the day and cool at night, with an average annual temperature of 23-27°C. The year is divided into dry and rainy seasons, with average annual rainfall of 1,500-2,500 millimeters.

[Panama Coffee Grade] SHG: full name Strictly High Grown, grown at altitudes above 1,200 meters HG: full name High Grown, grown at altitudes of 900-1,200 meters CS: full name Central Standard, grown at altitudes of 600-900 meters [Coffee Bean Variety] Butterfly consists of 70% Geisha coffee variety, made up of three varieties: Geisha, Caturra, and Catuai. What is pleasantly surprising is that on the basis of excellent quality, a very affordable price makes this coffee bean's value for money off the charts.

[Washed Processing Method] After the coffee fruit is picked, floating beans are skimmed off, the skin and pulp are removed, and then the coffee beans are soaked in a fermentation tank where microorganisms break down and soften the pectin. This process is called fermentation. Once fermentation is complete, the coffee beans are moved to a drying yard to dry. During drying, the beans need to be constantly turned to ensure even drying, until moisture content reaches 12%. Front Street often encounters many customers asking what the difference is between washed and natural. Simply put, washed highlights acidity and natural highlights sweetness, because the substantive difference between the two operations lies in whether the pulp is retained. Natural retains the flavor of the pulp, while washed does not. This is also obvious from the appearance. Front Street Coffee (FrontStreet Coffee) has a display area in its stores precisely to distinguish coffee beans with different processing methods. Washed coffee beans have a silver line in the middle, which is residual silver skin, while natural coffee beans do not.

Flavor analysis of the world's six classic coffee-producing regions: a specialty bean buying guide from Yirgacheffe to Fazenda Rainha

Jamaica is an island in the Caribbean. Jamaica's Blue Mountains are the highest mountains in the western Caribbean (2,256 meters high). The unique flavor of Blue Mountain coffee is related to the Blue Mountains' exceptional geographical location and climatic conditions. The Blue Mountains are located in the coffee belt at 25 degrees north latitude, with fertile new volcanic soil, fresh air, no pollution, year-round rain, high humidity, and large temperature differences between day and night. The soil here is rich in nitrogen and phosphorus and very suitable for coffee growth. Fertile volcanic soil, regular rainfall, and the hazy cloud cover on the island keep it away from the scorching sun. All these factors combined are what make Blue Mountain coffee what it is.

[Jamaica Blue Mountain Coffee Grade] Coffee from Jamaica's Blue Mountain region has three grades: Blue Mountain Coffee, Jamaica High Mountain Supreme Coffee Beans, and Jamaica Prime Coffee Beans. Among them, Blue Mountain Coffee and High Mountain Coffee are each further divided into two grades. By quality, from top to bottom, they are: Blue Mountain No. 1, Blue Mountain No. 2, High Mountain No. 1, High Mountain No. 2, Jamaica Coffee. The Blue Mountain coffee selected by Front Street Coffee (FrontStreet Coffee) is the highest grade, Blue Mountain No. 1. By quality from top to bottom: NO.1, NO.2, NO.3, and PB; PB means peaberry. According to CIB standards, the basic standards for NO.1 Blue Mountain green beans are beans of 17 screen size or above, defect rate below 3%, moisture content around 13%, etc. [Coffee Bean Variety] Typica originated in Ethiopia and southeastern Sudan. It is one of the oldest varieties among Arabica species. Its top leaves are copper-red, so it is called red-top coffee, also known as the old variety small-bean coffee. Because of low yield and difficulty of cultivation, its price is much higher than ordinary small-bean coffee. But its flavor performance is excellent, and it is recognized as a specialty coffee variety.

[Washed Processing Method] After the coffee fruit is picked, floating beans are skimmed off, the skin and pulp are removed, and then the coffee beans are soaked in a fermentation tank to ferment and soften the pectin. They are continuously washed and rinsed to remove the pectin, then moved to a drying yard to dry. During drying, the beans need to be constantly turned to ensure even drying, until moisture content reaches 12%. [Clifton Estate] The Blue Mountain region is a small place with only 6,000 hectares of planting area, so it is impossible for all coffee marked "Blue Mountain" to be grown there. Today Clifton Estate is the largest estate in this region. By international standards, it also counts as small-scale planting. Many of the estate owners are small landholders whose families have worked this land for two centuries. Clifton Mount is an ancient coffee-producing area in Jamaica that is still operating normally today, and in Jamaica only Clifton Farm has the "Rainforest" mark. The mark can only be certified if it meets the "Sustainable Agriculture Standard," and its barrels bear the rainforest certification mark. As early as the mid-eighteenth century (roughly around 1750), Clifton Estate began planting and producing coffee. The coffee planting and processing area here is located at an average of 4,300 feet (1,310.64 meters), with sufficient altitude, mild afternoon cloud cover shading the mountain forests, ample sunshine, and mineral-rich planting soil, providing good growing conditions for coffee trees and also extending the maturation of coffee cherries.

[Jamaica Blue Mountain Coffee Flavor Description] Rich and aromatic mouthfeel, with sweetness, acidity, and bitterness perfectly balanced, and very strong body.

Indonesia is located in Southeast Asia. Its coffee history dates back to 1696, when Dutch coffee farm owners tried to find broader coffee-growing land. After much exploration, they finally settled on Indonesia's Java Island. Over 30 years, Indonesia had already laid a sufficient foundation in the coffee market. Yet today, Indonesia's coffee representative is actually Mandheling. This is not an unexpected result, because from the beginning much of the Java coffee sold to Europe came from the Sumatra region, and Mandheling comes from Sumatra. So Sumatra can be said to be an important coffee-producing area of Indonesia. [Indonesian Coffee Grade] Indonesian coffee beans use the defect-bean proportion grading method. Indonesian beans are mainly divided into 6 grades, namely G1-G6. Fewer than 3 defective beans (in a 300g green bean sample) belongs to the highest grade, G1.

[Wet-Hulling Processing Method] Mandheling mostly uses Sumatra's unique coffee bean processing method—wet-hulling. Because the local weather is often rainy, with continuous typhoons, it cannot achieve the good weather needed for natural processing. Moreover, the local economy is not good, so it also cannot use the more expensive washed method. Thus the wet-hulling method with strong local characteristics emerged. In the first stage, a wooden pulper is used to remove the skin and pulp. After 3 hours of fermentation, it is dried until moisture content drops to the semi-dry, semi-wet level of 30-50%.

In the second stage, the pectin and parchment layer are removed, and drying continues in the later stage. The drying process takes 2-4 days, and moisture content drops to 12-13%. Golden Mandheling adds more rounds of screening on this basis, with more than three rounds of manual screening, giving Golden Mandheling the characteristics of uniform size and low defect rate.

[PWN] PWN (Pwani Coffee Company) registered Golden Mandheling, while a Japanese company registered "Gold Top Mandheling," which is also known as Ding Shang Golden Mandheling. In terms of flavor performance, the two are actually not very different, but because of different brands and different merchant marketing strategies, it is possible that public opinion ended up varying. So which of the two Golden Mandhelings is better is a matter of opinion. PWN was the first company to export Golden Mandheling to Japan, and Front Street Coffee (FrontStreet Coffee) also purchases PWN's Golden Mandheling.

[Indonesia Golden Mandheling Coffee Flavor Description] Layered and varied, rich and clean, highly balanced, with intense nut and caramel aroma, chocolate notes, and a lasting finish.

Brazilian coffee beans were introduced in 1720 from French Guiana (a country in northern South America). Brazil was then a Portuguese colony, while many other South American countries were Spanish colonies. Therefore most South American countries speak Spanish, while Brazil speaks Portuguese. A Portuguese military officer stationed in Brazil, in order to bring Guiana's coffee beans to Brazil (at the time the outflow of coffee to other countries was strictly prohibited), won the heart of the governor of Guiana's wife and successfully brought coffee seeds into Brazil. From then on, coffee rapidly adapted in Brazil, spreading from the north to São Paulo state in the southeast. By 1845, Brazilian coffee beans already accounted for 45% of the world's total coffee beans and had become São Paulo state's most important source of income.

[Brazil Coffee Grade] Among the many coffee-growing countries in Central and South America, Brazil's altitude is relatively low. Therefore Brazil does not, like Colombia and other countries, emphasize hard beans that can only grow at high altitudes, but instead grades coffee beans by four factors: bean size, defect rate, cupping score, and flavor. Flavor grading: from high to low, Strictly Soft, Soft, Softish, Hardish, Rioy. Defect-rate grading: by number of defective beans, 6 defective beans per 300g of green beans is NY.2. Only beans with no defects at all can become NY.1, and beans with no defects at all are rare and cannot maintain a stable supply. Therefore, among Brazilian green beans, the best is NY.2.

Flavor analysis of the world's six classic coffee-producing regions: a specialty bean buying guide from Yirgacheffe to Fazenda Rainha

Cupping quality grading: from high to low, Fine Cup, Fine, Good Cup, Fair Cup, Poor Cup, Bad Cup. FC (Fine Cup) and GC (Good Cup) are more common. Bean size grading: the largest screen size for Brazilian coffee beans is 19, but the yield is not much, so 17 and 18 screen sizes are the highest grades.

[Coffee Bean Variety] The Bourbon coffee variety is a secondary variety produced by mutation of the Typica coffee variety. Generally, when people mention the Bourbon coffee variety, they default to Red Bourbon, named for its red color when ripe. Yellow Bourbon does not refer to the unripe state of Red Bourbon, but rather is a cross between Bourbon and a yellow-fruited Typica variant. Its fruit is yellow when ripe. Because of lower yield and less resistance to wind and rain, it has not been widely planted. [Natural Processing Method] Screen highly ripe coffee fruit, place it directly in the sun to dry, turning the coffee fruit from time to time so it heats and dries evenly, until moisture content reaches 12%, then remove the skin and pulp.

[Brazil Queen Estate Coffee Flavor Description] Rich nut and dark chocolate flavors, fermented fruit, obvious sweetness, with a faint lemon aroma, and an overall rounded impression.

The above are the six coffee beans recommended by Front Street Coffee (FrontStreet Coffee). Even among the three on the acidic path, there are differences: Kenya has the strongest acidity, Panama Butterfly is in the middle, and Ethiopia is relatively mild. Among the three known for richness, Golden Mandheling has the highest body, Blue Mountain wins on balance, and Brazil's richness is the gentlest.
