For those just getting into specialty coffee, faced with a dazzling array of coffee beans, do you often feel unsure where to start? You want to quickly experience the flavor layers of coffee, yet worry that the bitterness might be too strong to accept? Front Street Coffee (FrontStreet Coffee) suggests starting with the "Washed Yirgacheffe Coffee Beans" from the everyday coffee bean series.

Front Street Coffee (FrontStreet Coffee) recognizes that beginners who spend a lot of money on beans that don't suit their taste can easily end up wasting money, so they have specially launched a series of coffee beans showcasing the distinctive flavors of 7 major coffee-producing regions, priced at 25 yuan/100g, to share with everyone. Although called everyday beans, the quality is by no means compromised—they are the stepping stone to guide everyone into the world of specialty coffee, and for judging whether you like the flavor of a particular region, this series plays a key guiding role.

The so-called regional flavor refers to the fact that regardless of coffee variety or processing method, when grown in a certain place, coffee beans will exhibit a unique taste representative of that region due to local terroir conditions. For example, when drinking coffee with citrus fruit acidity, people will naturally associate it with Ethiopia's Yirgacheffe region; while drinking coffee with a rich, herbal-spice-like flavor, they will think of Indonesia's Sumatra region. The reason Front Street Coffee (FrontStreet Coffee) recommends starting with Ethiopian washed Yirgacheffe is that this bean has soft acidity and low bitterness, making it very suitable for learning about and experiencing coffee's flavor layers.

The Yirgacheffe region is located in southern Ethiopia, and its original meaning is "natural wetland." This region was originally part of another well-known Ethiopian coffee-producing area—Sidama—and was just a small town within the Sidama region. However, because the coffee produced in the town of Yirgacheffe every year carried unique floral aromas and citrus fruit acidity, in 2010 the Ethiopia Commodity Exchange separated Yirgacheffe from Sidama, making it an independent region that is now widely beloved as the Yirgacheffe region.

The town of Yirgacheffe is not large, and local residents mostly grow coffee trees in their own backyards. After the coffee cherries are harvested, they are sent to nearby coffee cooperatives for unified processing and exported under the cooperative's name. Because the area is rich in water resources, sufficient to wash-process coffee cherries, resulting in higher quality and cleaner acidity, the Yirgacheffe region has produced many cooperatives famous for washed processing, such as the Idido Cooperative, Kochere Cooperative, and Worka Cooperative.

Of course, this town also produces sun-dried processed coffee beans, as well as currently popular specialty processed coffee beans. Compared with washed processing, sun-dried processing gives coffee a fuller taste and a slight fermented aroma; while specialty processing methods focus on highlighting a particular coffee flavor.

Ethiopia is the birthplace of all coffee varieties, and the local coffee varieties are extremely rich, including both confirmed varieties and unconfirmed ones, as well as protected varieties that are not publicly disclosed. Therefore, coffee grown in Ethiopia is rarely a single variety; most are mixed plantings and mixed harvests of multiple varieties, so except for a few individual varieties, the coffee beans produced in this region are collectively called Ethiopian Heirloom. It is also precisely because of the differences in bean size among varieties that another characteristic of Ethiopian coffee beans is their uneven bean size.

Front Street Coffee's (FrontStreet Coffee) Yirgacheffe region coffee beans include not only the washed Yirgacheffe coffee beans mentioned earlier, but also sun-dried Red Cherry (all-red coffee cherries) coffee beans from the Aletaland Cooperative, Kochere washed processed coffee beans, and Worka Cooperative washed processed coffee beans. In order to preserve the floral aroma and citrus fruit acidity unique to the Yirgacheffe region, Front Street Coffee (FrontStreet Coffee) uses a light roast, preserving most of the acidity while bringing a pleasant sweetness. To let everyone experience the charm of freshly roasted coffee beans, after ordering on Taobao, the coffee beans will be shipped within five days after roasting is completed.

When brewing coffee beans from the Yirgacheffe region, Front Street Coffee (FrontStreet Coffee) recommends using a higher water temperature, a grind size like fine granulated sugar (80% passing rate through China's No. 20 standard sieve), and a water temperature of 90-91°C for brewing. The recommended brewing ratio is 1:15, and the recommended technique is three-stage pouring.

Pouring and brewing steps: Start timing, pour water for the first time up to 30g, and let it bloom for 30 seconds; then begin the second stage, pouring in a small stream in a circular motion up to 125g, wait for the water level in the coffee bed to drop halfway before pouring again, continue pouring in a small stream in a circular motion up to 225g, and after all dripping is complete, the total extraction time is about 2 minutes 00 seconds to 2 minutes 10 seconds.
