What do the leading specialty coffee beans have in common?
A 2023 roundup of widely traded single-origin specialty coffee beans includes Panama Emerald Estate Red Label Geisha, Jamaica Blue Mountain No. 1, Indonesia Golden Mandheling, Ethiopia Yirgacheffe Gudingding Cooperative, Ethiopia Sidamo Huakui, Kenya 72-hour washed, Costa Rica Strawberry Candy, Yunnan small-bean, Brazil Queen Estate, and Papua New Guinea Bird of Paradise. How are single-origin coffee beans made into pour-over coffee?
Based on past extraction experience, Front Street recommends that friends new to pour-over start with three-stage pouring. Extracting in three stages allows flavor compounds to dissolve more fully, giving a richer layered mouthfeel, while also preventing over-extraction caused by too long a steeping time.
Taking 15 grams of coffee grounds as an example, with a coffee-to-water ratio of 1:15, the total pouring amount is 225 milliliters, divided into three stages: 30 milliliters, 95 milliliters, and 100 milliliters, corresponding to readings on the scale of: 30 grams, 125 grams, and 225 grams.

Here Front Street chooses its own roasted washed Yirgacheffe Gudingding Cooperative coffee beans, paired with a Hario V60 dripper for brewing. The V60's spiral rib structure helps the coffee grounds degas and activates the release and dissolution of aromatic acidic compounds as much as possible. Yirgacheffe is a light roast, and the beans are relatively hard, requiring hot water at 92°C to 93°C to fully bring out the floral and fruity notes.
For grinding, Front Street recommends medium-fine grinding (78% passing rate on China standard No. 20 sieve), with a coarseness close to fine granulated sugar. If ground too coarse, the rich and rounded flavors are difficult to extract, and the coffee will taste thin; if ground too fine, it is easy to over-extract at high temperature, and bitterness will emerge.
As for the coffee-to-water ratio, Front Street believes 1:15 to 1:16 is a reasonable range. If you prefer a richer mouthfeel, use 1:15; if you want to feel the floral and sweet notes more clearly, use 1:16 to let the flavors open up more.
First place the folded filter paper into the dripper to fit snugly, pour in 15 grams of ground coffee, then tare the electronic scale to zero.
For the first stage, pour 30 grams of water and bloom for 30 seconds, starting the timer as you pour. Throughout, use a small stream to circle from the center outward, making sure to wet the entire coffee bed.
After 30 seconds, increase the water flow slightly and steadily pour the second stage of 95 grams. The purpose is to raise the entire coffee bed. Keep the water column vertical and even. At this point the timed scale shows 125 grams, completed in about 55 seconds.
Wait until the liquid level drops to the halfway point, then switch to a small stream and pour in small circles for the third stage of 100 grams. Do not make the stream too strong, otherwise it is easy to disturb the coffee bed and cause under-extraction. The final total pouring amount is 225 grams, and dripping finishes at about 2 minutes. Remove the dripper, swirl the coffee liquid in the server to mix evenly, and it is ready to taste.
The pouring amount for each stage is not fixed; it can be adjusted flexibly according to your accumulated pour-over experience and understanding of the beans. Front Street understands coffee brewing as an experiment based on science. To learn pour-over well, you need to deeply understand the meaning behind each parameter. Only then can you find the experimental method and gradually build a brewing framework that suits you.
