Ethiopia has traditionally continued to use the ancient natural processing method. After the washed method was introduced in 1972, over decades of development, the proportion of washed processing has far exceeded natural. Washed processing can effectively reduce the defect rate of coffee beans and presents a cleaner and more transparent flavor.

However, some farm owners still have a particular fondness for natural processing. Brewing Recommendations for Front Street Yirgacheffe Coffee: Natural vs. Washed
