The story of Elida Estate began in 1918. It belongs to the Lamastus family holdings, and the name "Elida" was taken from the name of the wife of then-owner Robert Louis Lamastus.

Elida Estate is located in the Boquete region, and its elevation is almost unmatched anywhere in Panama, with nearly half of its land designated as part of a national protected park—such an ultra-high-altitude estate is truly rare in Central America. Elida Estate covers a total area of 65 hectares, more than half of which lies within Baru Volcano National Park. The area used for growing coffee trees is 30 hectares, while the remaining 35 hectares remain pristine forest. The coffee-growing zone is distributed between 1,670 and 1,850 meters, placing it alongside another estate in the Volcan Valley, Carmen Estate, as one of the two highest-altitude coffee estates in Panama.

Baru Volcano is steep and is a young active volcano with an elevation of over 3,400 meters. Because the temperature difference between day and night is extremely wide, coffee trees at Elida Estate require five years of careful tending from sowing to their first harvest, far longer than in typical regions (which usually need only three years). Despite the slow growth, these conditions are highly beneficial for the accumulation of coffee flavor. Once the harvest season arrives, influenced by temperature, the coffee cherries' ripening period often exceeds one month. If a hurricane or heavy rain or other force majeure occurs just before ripening, even knowing it will cause major losses, the estate refuses to harvest early because the beans have not reached harvest standards, insisting on quality first, which leads to a significant reduction in yield. Compared with lower-altitude estates, the risks borne here are clearly much greater.

According to Front Street Coffee's understanding, plantations in Panama's Boquete region mainly adopt three models: sun plantations, full-shade plantations, and semi-shade plantations. Those with more than 50 shade trees per hectare are full-shade plantations; those with 25 to 50 are semi-shade plantations; and those with fewer than 25 are called sun plantations. Shade growing can slow the ripening speed of coffee cherries, allowing the cherries to accumulate richer flavor compounds inside. Therefore, shade itself means increased costs and reduced yields, but the coffee produced will have better flavor than semi-shade plantations under the same conditions. At present, most plantations in Colombia use a model of growing coffee trees together with banana trees, because as Arabica varieties become increasingly dwarfed, banana trees can provide shade once they grow tall.

Most Geisha coffee beans from Panama estates undergo manual selection and belong to specialty Arabica beans. Every batch can be traced to its source—which plot of which estate, or which cooperative or which farmer—all in pursuit of a sense of place. Only by traveling to the coffee origin and stepping onto a coffee estate can one possibly understand where that trace of coffee depth, captivating flavor, and shifting aroma comes from—whether it is microclimate, variety, processing method, or the coffee farmer's secret.

Geisha Variety

Geisha refers to a coffee variety, written in English as "Geisha/Gesha," which happens to be homophonous with the Japanese word for "geisha," so some people also call the Geisha coffee variety "geisha." The Geisha variety was discovered in 1931 in the Geisha forest of Ethiopia, then sent to the Kenya Coffee Research Institute. It was introduced to Uganda and Tanzania in 1936, to Costa Rica in 1953, and only arrived in Panama in 1970.

At first, Geisha did not attract much attention until Panama's Hacienda La Esmeralda, also known as Esmeralda Estate, separated it from other varieties in 2003 and won the BOP competition championship in 2004, after which the Panama Geisha coffee variety officially entered the public eye. The Geisha variety has a refined flavor, but the formation of this elegant flavor cannot be separated from a specific growing environment. Geisha is very demanding about growing conditions, requiring areas with higher elevation, cloud cover or abundant shade trees, and fertile soil. In addition to its exceptional ultra-high altitude and microclimate, the estate owner, Mr. Wilford, has also devoted extremely deep effort to harvesting and processing. To achieve the highest standards, Elida Estate allows only hand-picking of the ripest coffee cherries (Ripe on Pinton). The high degree of ripeness means the mucilage naturally has high sugar content, and this is also the foundation for Elida's excellent flavor.

Mr. Wilford, the estate owner, is not only extremely strict about coffee cultivation and processing, but is also more rigorous than his peers in the "purification" stage after green bean processing. Processing Method

This bean uses anaerobic fermentation low-temperature slow sun-drying processing. The harvested coffee cherries are placed in sealed containers to ferment for 4 to 5 days, then spread in a thick layer on drying beds to dry slowly. The low-temperature slow sun-drying processing method requires producers to invest more time and effort. Nurtured by time, slow drying allows the coffee cherries to develop optimal water activity during this process. First, flavor development is better; second, the green beans can be stored longer during the seasonal cycle. At the same time, however, this method not only depends on the weather and requires climatic cooperation, but also extends the time required for each batch of production, increasing green bean costs.

For brewing, Front Street uses staged extraction. Pour the ground coffee into the filter paper, start pouring 30g of water from the center and bloom for 30 seconds, making sure to keep a steady circular pour from inside to outside with a small stream throughout; for the second stage, pour 95g of water, and once the coffee liquid has almost finished draining, begin pouring the third stage of 100g, then remove the dripper once all the coffee has filtered through. The time is about 2 minutes, with a margin of about 10 seconds either way.
