First Washing and Fermentation

After coffee cherries are harvested, they first undergo water-flow density sorting; the principle is to use differences in the fruit's own density and mass for selection; high-density (heavier) beans sink in water, while low-density ones float. Fully ripe and good-quality fruit has high density, so these are selected for further processing. After selecting high-quality and sufficiently ripe fruit, the skin is removed, and they are washed and soaked so that the mucilage attached to the outer layer of the green beans ferments. Mucilage contains natural sugars and alcohols, which play an important role in the development of coffee sweetness, acidity, and overall flavor. The fermentation time lasts as long as 24 hours, and after fermentation most of the mucilage can be removed, leaving only the flavor inside the coffee beans.

Second Washing and Fermentation

This coffee has relatively small beans, medium density, and its own moisture content is not high. The roasting goal is set around light-medium roast. Unlike other Kenyan light roasts, this Little Cranberry uses a light-medium roast to reduce acidity intensity, improve body and balance, and present a sweeter, juicier overall performance. In the first batch of roasting, the drop temperature was relatively high, with a charge temperature of 200°C and relatively strong heat. During roasting, it was found that this bean's altitude is not particularly high and the bean quality is slightly soft, so a method of gradually reducing heat and stabilizing the rise was adopted. Heat was adjusted finer respectively when the beans entered the yellowing point, finished dehydration, and showed signs before first crack, to avoid scorching the bean surface, and the first crack time was slightly extended to increase caramelization reaction time and improve flavor body and balance.

At this time you must listen clearly to the sound of the first crack point. At 8'28" first crack begins, reduce heat to 50°C, open airflow fully to 5 (adjust heat very carefully, not so low that there is no cracking sound), develop for 2'00" after first crack, drop at 193°C.

06|Kenyan Coffee Grades

Many people are confused by letters such as AA and PB in Kenyan coffee names, but actually these are Kenyan coffee grades. Kenya is quite strict about coffee quality control and classifies coffee by bean size and shape into AA, AB, C, E, PB, TT, T, ML, and MH. Grading mainly distinguishes bean shape and size, but many people believe that larger beans contain more oils that produce coffee aroma, so large-bean coffee commands a higher market price. AA is 17 mesh and 18 mesh, AB is 15 mesh and 16 mesh. Taking Front Street's Little Cranberry as an example, it is an AB-grade coffee bean and is clearly different in size from AA-grade beans.
