Today Front Street continues its latte art course! This time we're teaching the most beginner-level pattern — the big heart. It's safe to say that almost everyone's first successful latte art pour is this shape, and it's also the foundation for many patterns that follow. However, to practice it well, you first need to solidify the prerequisite skills: espresso extraction, milk frothing, pitcher grip, and integration technique. - Milk Foam Thickness

Let's start with the milk foam requirements. Fine texture is the bottom line, but thickness is actually quite flexible — as long as it can still flow, it's OK. In other words, milk originally filled to the 5th mark can be frothed to anywhere between the 6th and 8th mark. In fact, if you froth it thicker, the heart comes out plumper and prettier. Conversely, those who usually make rippled patterns may sometimes, due to muscle memory, struggle to pour an ideal big heart.

- Integration Amount

How much you integrate depends on how much "convection" you want when pouring the pattern. The less you integrate, the stronger the convection. For example, when pouring a "rippled tulip," you need strong convection, so you only integrate to the 4th mark of the cup. When pouring a "wheat ear," the convection requirement is low, so you need to integrate to the 8th or 9th mark.

As for the "big heart," its convection requirement is moderate, so Front Street usually integrates to the 7th mark. If you integrate too little, the heart expands too much; if you integrate too much, the heart shrinks too small — neither looks good.

- Pour Point

The heart requires symmetry, so you must pour along the central axis; once it deviates, the entire pattern tilts to one side and loses its beauty. The correct pour point should be near the quarter point on the side closest to the pitcher, so the heart lands steadily in the center of the cup.

- Pouring the Pattern

When pouring the pattern, the milk flow should be as large as possible to enhance convection and make the pattern fuller. While pouring, slowly push the pour point from the quarter point toward the center, while your left hand gradually returns the cup and your right hand gradually raises the pitcher spout, preparing for the finish. - Finishing

The finishing move is crucial — many people fail right at this step. When the cup reaches the 9th mark, you should begin the finish. At this point, reduce the flow, raise the pitcher spout, move along the central axis to the bottom of the heart, then decisively cut the flow. This leaves a short little tail.

Some people like to drag the pitcher outside the rim of the cup when finishing, resulting in a long tail trailing from the heart — it's neither attractive nor clean, and it easily dirties the coffee cup.

The problem in the above image is that the two lobes are uneven — one big, one small. The cause is that the cup wasn't level during pouring, or the pitcher wasn't held straight.

The above image no longer looks like a heart. The cause is that during the convection stage, the pitcher spout didn't move forward and stayed at the quarter point the whole time.

The heart in the above image is flat and elongated, not plump enough. This is because the pitcher was raised during the convection process.

In the above image, there isn't enough white milk foam behind the heart, and there's a long tail trailing. Insufficient foam may be due to the milk foam not being thick enough, or not tilting the pitcher significantly during pouring to create a large milk flow. The long tail is because the finish wasn't decisive enough, and excess milk flow seeped out.

The pattern in the above image is overall too low. The problem lies in the pour point. The pour point for this cup was chosen at the center position, so the entire pattern shifted downward.
