Exactly how hot the water should be depends on the type of equipment, the coffee bean variety, and the roast level. It is one of the most concentrated among common coffee types, with a unique aroma and a layer of crema floating on the surface. It can be enjoyed on its own or used as a base to further create many kinds of drinks. Because extraction is fast, concentration is high, and caffeine content is relatively low, many chain coffee brands and flavored coffee products use this method.

The moka pot, also called the "Italian coffee pot," consists of three layers. After the water in the bottom chamber boils, steam pressure pushes the hot water through the coffee grounds in the middle layer and finally up into the upper chamber. The resulting coffee's strength can rival espresso, except that it lacks that layer of crema. However, if a pressure-reducing gasket is installed at the coffee outlet, golden crema can also be extracted. The moka pot and automatic espresso machines share the same structural principle, but the direction of water flow is exactly opposite. When about 30 to 40 milliliters of coffee has flowed out, the pot should be removed from the heat source as soon as possible, and the bottom of the pot wiped with a cold towel to stop extraction.

3. Gravity Method

American coffee, or the paper filter brewing method, places coffee grounds on top of a paper filter or metal mesh, and hot water is poured from above and flows down naturally. The final strength depends on the coffee-to-water ratio and grind size, but generally it is lower than espresso.

Electric percolators were very common in the United States before the 1970s. They differ from the previously mentioned moka pot: after the hot water boils, it enters the top layer, then passes downward through the coffee grounds and returns to the heating chamber, repeating this cycle.
