Ethiopia is one of the important producers of Arabica coffee in Africa, and its coffee quality ranks among the best in the world. Legend has it that coffee was first discovered by a shepherd in the Kaffa region, and the name "coffee" also originates from Kaffa, which is why this place is regarded as the hometown of coffee.

Coffee Production and Processing

Ethiopia's natural conditions are extremely suitable for coffee cultivation. Coffee is mainly distributed in the southern highlands at altitudes of 1,100 to 2,300 meters, with well-known producing regions including Harar, Limu, Jima, Sidamo, Kaffa, Yirgacheffe, and Wellega. These areas have well-drained soil that is slightly acidic, with a red, loose texture.

Ethiopian coffee is harvested once a year. From March to April, pure white coffee flowers bloom on the branches, and then the fruit begins to develop. From September to December, the red fruits ripen and are ready for picking. From November to December, the new season's coffee enters the export stage.

Currently, about a quarter of the population depends directly or indirectly on the coffee industry for their livelihood. Most farmers follow traditional cultivation methods, tending coffee trees by hand, applying organic fertilizer, and not using harmful pesticides or herbicides. Therefore, most coffee produced in Ethiopia has organic characteristics.

Based on cultivation methods, coffee can be divided into three categories: forest-semi-forest coffee, garden coffee, and plantation coffee.

Among these, forest-semi-forest coffee accounts for 60%. This type of wild coffee forest uses no pesticides at all and relies on biological methods for pest control.

Garden coffee accounts for 35%. Three-dimensional cultivation is used in the garden, with coffee placed in the lower layer, obtaining a suitable growing environment through the shade of other crops, and fertilizer mainly consisting of fallen leaves, dry grass, and animal manure.

Plantation coffee accounts for only 5% and belongs to a modern cultivation model. The coffee grows in stands, but new varieties are used, and they are planted in alternating rows with other shade trees.

By processing method, coffee can also be divided into washed coffee and natural coffee.

Washed coffee accounts for 35% of exports. High-quality washed coffee uses freshly picked, fully ripe fruit, with careful picking and strict monitoring by dedicated personnel. Cleanly sorted coffee beans must be pulped on the same day they are picked, then undergo fermentation, washing, drying, and hulling, with moisture controlled at around 12% after processing.

Natural coffee accounts for 65% of exports and is mainly picked by families. The red coffee beans are spread out to dry on concrete floors or raised tables to about 11.5% moisture, then hulled and cleaned.

Coffee Grading and Quality Control System

Ethiopia's coffee grading and quality control system is divided into three levels: producer, regional, and national. All coffee must be inspected by local inspection agencies before leaving the place of origin, and then re-inspected at the coffee inspection and grading centers in Addis and Dire Dawa to determine the quality grade. Grading is carried out before auction and sale and is crucial to every stage of production, purchasing, export, and consumption. Before export, coffee must also be submitted to the national quality control agency for inspection to confirm that origin, color, and other factors meet export standards, so as to safeguard the reputation of Ethiopian coffee.

At present, Ethiopian coffee grading and quality control are mainly based on two indicators: visual inspection and cup evaluation, examining coffee bean color, cleanliness, origin, taste, and characteristics. Export grading is indicated by simple numbers: the best washed coffee is Grade 5, and the best natural coffee is Grade 4. After grading, the coffee can be exported once the place of origin is marked. Export usually uses letter of credit payment, which both reduces the foreign exchange collection risk for exporters and provides quality assurance for importers.

According to legal regulations, all coffee must be traded through auctions in Addis and Dire Dawa. During the harvest season, auctions are even held twice a day.

Coffee Exports

Coffee is Ethiopia's most important export cash crop and also the main source of foreign exchange income. Ethiopian coffee exports account for about 3% of the world market share, making it the world's eighth-largest coffee exporter. Export volume rose steadily from 58,000 tons in 1990-1991 to 110,000 tons in 1995-1996, and remained at that level in the following years. In 2001-2002, export volume exceeded 110,000 tons, and in 2002-2003 it reached 127,000 tons. Because international coffee prices continued to fall for a decade, Ethiopia's foreign exchange income was severely affected. Before the sharp price decline, coffee export revenue accounted for more than half of Ethiopia's foreign exchange income; now it accounts for only about 35%. However, according to a report by the International Coffee Organization, coffee prices began to recover in 2002, rising from 41 cents per pound in September 2001 to 52 cents in 2002, and then to 59.7 cents per pound in 2003. In March 2004, the average price was 60.8 cents per pound, an increase of 50% compared with September 2001. This is undoubtedly very good news for Ethiopia.

The people of Ethiopia love coffee. In 2003, domestic consumption accounted for 42.3% of total production, with per capita consumption of 3 kilograms. But more than half of each year's coffee production is used for export to earn foreign exchange. The main exporting countries include the United States, Italy, the United Kingdom, Sweden, Norway, Greece, France, Belgium, Germany, and Australia.

Before 1974, the rights to coffee production, processing, and trade were all in private hands. During military rule, private farms were nationalized, and smallholder coffee producers were neglected. In 1991, Ethiopia's transitional government issued a new economic policy encouraging private merchants to export coffee, and the number of private coffee exporters surged accordingly. At present, nearly 90% of coffee exports are controlled by private exporters.

Characteristics of Ethiopian Coffee

The natural characteristics of coffee beans include size, shape, acidity, body, taste, and aroma. Ethiopian coffee beans are small in size, strong in aroma, and have a wine-like acidity, making them highly favored by enthusiasts. Because of their unique fragrance and taste, they are often used in the production of beverages, ice cream, and candy, as well as in variety improvement.

The world-renowned Ethiopian coffees mainly include:

1. Limu Coffee: Grown at altitudes between 1,400 and 2,000 meters, washed processed. Superior quality, with a rich nutty aroma, suitable acidity, and wine-like intensity. Annual output 29,000 tons.

2. Jima Coffee: Grown at altitudes between 1,400 and 1,800 meters, natural processed. Slightly acidic, with a nutty aroma and a long finish. Annual output 70,000 tons.

3. Gimbi Coffee: Grown at altitudes between 1,500 and 2,300 meters, a gourmet-grade coffee, with moderate acidity and fruity aroma. Annual output 34,000 tons.

4. Yirgacheffe Coffee: Grown at altitudes of 1,500 to 2,200 meters, with mocha flavor and floral and spice notes. Average annual output about 28,000 tons.

5. Sidamo Coffee: Grown at altitudes of 1,400 to 2,200 meters, with suitable acidity and superior quality. Average annual output about 37,000 tons.

6. Harar Coffee: Grown in highlands above 2,700 meters, one of the best coffees in the world, with medium acidity, intoxicating exotic flavor, and a slight tipsy, dried-fruit aroma; it is pure mocha coffee. Average annual output about 26,000 tons.
