1. Varieties of Arabica

In the biological classification system, "kingdom, phylum, class, order, family, genus, species" form a hierarchy from high to low, and below "species" it can be further subdivided into subspecies, varieties, and cultivars. Arabica coffee is generally believed to have originated in the Ethiopian highlands, then spread widely in tropical regions, and after countless genetic mutations and artificial breeding, gradually evolved into a large number of varieties. According to existing statistics, there are more than seventy different varieties within Arabica alone. For example, the difference in "varieties" is like the difference between Thai jasmine rice and Northeast rice; coffee, like rice, has a rich pedigree of varieties. In terms of variety improvement, coffee and rice have similar goals—improving disease resistance, increasing yield per unit area, and enhancing environmental adaptability. However, rice also pursues improved taste, while coffee has long focused more on production efficiency, with improvements in flavor quality placed in a secondary position, and even a phenomenon of quality "deterioration" has appeared. Several Major Coffee Varieties and Their Characteristics

Typica

As the variety closest to the original species within Arabica, Typica is almost the source of all Arabica varieties. It was once widely planted in Central and South America, with relatively long beans and extremely outstanding aroma and acidity. However, Typica lacks resistance to coffee leaf rust and requires a large number of shade trees, resulting in low yield (like Bourbon, it can only be harvested once every two years). Colombia planted Typica entirely before 1967, but now 80% to 90% of coffee farms have switched to Caturra or Variedad Colombia, which have higher yields and can tolerate direct sunlight. At present, pure Typica is already very rare in the Colombian coffee market.

Bourbon

Typica is the excellent subspecies closest to the original Arabica species, while Bourbon is a subspecies mutated from Typica, and the two stand together as the oldest extant coffee varieties. Bourbon was introduced from Yemen to East Africa east of Madagascar, then spread to Bourbon Island in the Indian Ocean (now called Reunion Island), and later entered Brazil with French colonists. Bourbon beans are small and round, mostly densely clustered, so the center line appears S-shaped. Its yield is 20% to 30% higher than Typica, but compared with other high-yield varieties it is still low; combined with harvesting only once every two years, it was gradually replaced by other varieties. Bourbon hybrids and mutants such as Mundo Novo and Catuai are high quality in aroma and body, while also retaining the excellent characteristics of Typica.

Caturra

This is a Bourbon mutant discovered in Brazil. The tree is short, the beans are relatively small, the yield is high, and it is resistant to coffee leaf rust. The disadvantage is that it does not bear fruit until the second year, that is, it is harvested once every two years. Caturra's quality is extremely high, but the cost of care and fertilization is not low. It is suitable for planting in mid-to-high altitude areas from 450 to 1,700 meters above sea level with annual rainfall of 2,500 to 3,500 millimeters. Its flavor characteristic is prominent acidity with a slightly stronger astringency.

Mundo Novo

This is a variety formed by natural hybridization of Bourbon and Sumatra in Brazil, with strong environmental adaptability and resistance to pests and diseases. Although it is a high-yield variety, its growth rate is slow, its beans are relatively large, and the tree can reach more than 3 meters in height—a height beyond the operating range of mechanical harvesters, so it is not suitable for mechanized harvesting and must be pruned at the top branches and leaves every year. Mundo Novo began to be planted in Brazil around 1950, and today it is listed alongside Caturra and Catuai as one of Brazil's main varieties. Its acidity and bitterness are well balanced, and its taste is close to inherent varieties, so it was widely sought after as soon as it came on the market and was named "Mundo Novo" (New World).

Catuai

A hybrid offspring of Mundo Novo and Caturra. Because Mundo Novo's tree height was too tall and made harvesting difficult, after crossing it with the short Caturra, Catuai was obtained with high yield, strong environmental adaptability, and low tree height. Unlike Caturra, Catuai bears fruit every year. Although it requires sufficient fertilization, it is resistant to pests and diseases, and its fruit is not easy to drop even in strong winds and heavy rain. However, its fruit development and harvest lifespan is only about ten years, and its short lifespan is the main weakness. Catuai is mainly cultivated in a vast area from Colombia to Central America, and its taste is more monotonous than Mundo Novo, with a lack of body as well.

Maragogype

This is a mutant of Typica that appeared in Brazil. The beans are extremely large and need to be filtered with a screen size of No. 19 or above. The taste is somewhat lacking, but its appearance is excellent, so it is favored by some markets. The tree is relatively tall and the yield is low.

Kent

A variety originating in India. It has high yield and strong resistance to diseases, especially coffee leaf rust, and is considered a hybrid of Typica and other varieties.

Amarello

Usually coffee cherries are red when ripe, but the fruit of this variety, as its name suggests (Amarello comes from Modern Latin Amprellus, meaning "yellow"), is yellow when ripe. The tree is short and the yield is high.

Catimor

Successfully bred in Portugal in 1959 by crossing the highly leaf-rust-resistant Timor (a hybrid of Arabica and Robusta) with the Bourbon mutant Caturra. It is the variety with the best growth vigor and the highest yield among high-yield commercial varieties. The tree height is relatively low, and both the coffee fruit and green beans are relatively large. There are many new varieties derived from Catimor. Overall, the Catimor series varieties are robust, environmentally adaptable, and high-yielding. Only in flavor, low-altitude-grown Catimor is not much different from other commercial varieties, but Catimor produced at high altitudes above 1,200 meters is clearly at a disadvantage compared with Bourbon, Caturra, and Catuai.

Variedad Colombia

A highly disease-resistant variety bred by crossing Catimor and Caturra, tolerant of direct sunlight and capable of short-term harvest. Colombia began widespread planting in the 1980s, replacing the former inherent variety Typica as the main force. Generally speaking, Arabica coffee trees represented by Typica need shade trees for shade, but Variedad Colombia, which has one-quarter Robusta lineage, does not need shade trees and can produce and harvest throughout the year. However, in recent years, possibly due to the influence of pesticides or chemical ingredients, the coffee beans may emit a phenol-like smell (Phenol, a foul odor similar to iodine). The difference from the inherent variety Typica can be seen at a glance through dark roasting. Generally, after dark roasting, coffee's acidity weakens and bitterness increases, while Variedad Colombia coffee shows a sharp increase in bitterness after the second crack.
