Yunnan is the core producing region for coffee beans in China. Located south of the Tropic of Cancer, it has a subtropical mountain climate and unique plateau red soil that is loose and nutrient-rich, with mild temperatures, providing an ideal environment for cultivating small-bean coffee.
The history of coffee cultivation in Yunnan can be traced back to 1902, when French missionaries introduced coffee to the area. Today, in Zhukula Township of Binchuan County, 24 coffee trees over ninety years old still survive. In 1914, Jingpo border residents in Ruili introduced coffee from Myanmar to Nongxian Village. Typica and Bourbon, two classic high-quality varieties, form the main cultivation base of Yunnan coffee. Because the two are similar in morphology and habits, mixed planting is often used in production. Bourbon's young shoot tips and leaves are green, and it is called green-top coffee; Typica's young leaves are copper-red, commonly known as red-top coffee.

Baoshan coffee: The dry-hot river valley of Lujiangba has long been known as Baoshan's "tropical treasure house." The average annual temperature in the dam area is 21.5°C, with an extreme maximum temperature reaching 40.4°C, and there is basically no frost throughout the year. The small-bean coffee produced here is rich but not bitter, aromatic but not harsh, with small and uniform beans, a full-bodied mellow fragrance, and fruity notes.
Simao coffee: Simao is located in the upper reaches of the Lancang River, with steep terrain, and is also one of China's famous Pu'er tea-producing regions. At the same time, Simao is also the region with the largest coffee planting area in China, with about 150,000 mu of planting area and output reaching 22,500 tons. The altitude in this region ranges from 1,000 to 2,000 meters, mainly mountainous and sloping land, with large numbers of dry-hot river valleys and barren hills, fertile soil, abundant sunshine, plentiful rainfall, and significant temperature differences between day and night, making it very suitable for coffee growth. Thanks to its unique geographical and climatic conditions, Yunnan Simao coffee has developed a style that is rich but not bitter, aromatic but not harsh, and slightly fruity. Coffee quality is affected by multiple factors such as growing environment, climate, and cultivation and management techniques. Its optimal growing conditions include low latitude, high altitude, sufficient rainfall, and suitable sunlight. Other regions in the same latitude belt, such as Hawaii in the United States and Saudi Arabia, either lack sufficient altitude or are dry with little rain. Only Yunnan Simao simultaneously satisfies all the suitable conditions, thus creating the distinctive mellow flavor of Simao coffee.

Botanical characteristics of small-bean coffee
I. Roots
Coffee is a shallow-rooted crop, and plants propagated from seed form a conical root system. In terms of varieties, the roots of small-bean and medium-bean coffee are relatively shallow, while those of large-bean coffee are deeper. The taproot of a 3–4 year old bearing Yunnan small-bean coffee tree is about 70 cm deep. Lateral roots growing from the taproot are called horizontal lateral roots when they extend horizontally and vertical lateral roots when they grow downward. Roots further produced from lateral roots are called secondary lateral roots and tertiary lateral roots in turn. The coffee root system has a distinct layered structure, usually one layer every 5 cm, but absorbing roots are mainly concentrated within the 0–30 cm soil layer. The coffee root system has strong regenerative ability.
II. Stems
The coffee stem is upright, and young stems are slightly square and green, turning round and brown after becoming corky. The internodes of small-bean coffee stems are 4–7 cm long, with a pair of leaves at each node. There are superimposed buds in the leaf axils; the upper one is called the upper bud and the lower one is called the lower bud. The upper bud develops into a branch, while the lower bud develops into an orthotropic shoot. The upper and lower buds can sprout at the same time.
The growth of the coffee main stem shows obvious apical dominance, and branches near the top of the main stem grow especially vigorously. However, this dominance gradually weakens as the main stem grows taller. If allowed to grow naturally, each type of coffee will continue to grow taller according to its own growth vigor: small-bean coffee can reach 4–6 meters, medium-bean coffee 6–8 meters, and large-bean coffee can exceed 10 meters.
The growth of the main stem has seasonal variation. Growth is small in the dry season and internodes are short; growth is greater in the rainy season and internodes are long; growth is smallest in winter and internodes are shortest, forming dense nodes. Coffee branches can be divided into the following categories according to their position and growth direction: primary branches, secondary branches, tertiary branches, lateral secondary branches, and orthotropic shoots.
III. Leaves
Coffee leaves are opposite, usually arranged in two flat rows, with occasional single leaves in whorls. The petiole is short, and the leaf blade is leathery, green, glossy, and elliptical to oblong. Small-bean coffee leaves are relatively uniform in size, small with elongated pointed tips, and have obviously wavy margins, about 12–16 cm long and about 5–7 cm wide. Coffee tree leaves have a typical dorsiventral symmetrical structure, and the leaves contain tannins, starch grains, and calcium oxalate.
IV. Flowers
Flowers grow in clusters in the leaf axils, several to dozens together, with each 2–5 flowers borne on a floral axis. The pedicel is short, and the flowers are white and fragrant. The petals of medium- and small-bean coffee are generally 5 in number. The bases of the petals are connected into a tube, forming a salverform corolla. The number of stamens is usually the same as the petals, and they are inserted at the throat of the corolla. The anther has two locules and is borne at the two ends of the filament, the two forming a "T" shape. The pistil style is slender like a thread, the stigma is two-lobed, and the ovary is inferior, usually with two locules. Each locule has one anatropous ovule on the central placenta, with a very short funicle. It is an insect-pollinated flower; large-bean and small-bean coffee can self-pollinate, while medium-bean coffee is mostly cross-pollinated.
Coffee is a short-day plant and has the characteristic of flowering multiple times with a concentrated flowering period. The flowering period of small-bean coffee in Yunnan (Dehong Dai and Jingpo Autonomous Prefecture) is from February to July, with the full bloom period from March to May. Coffee flowering is greatly affected by climate, especially rainfall and temperature. Coffee flowers have a very short lifespan, only 2–3 days. Small-bean coffee generally begins to open at 3–5 a.m. and reaches full bloom at 5–7 a.m.
V. Fruit
The fruit is a berry, elliptical, 9–14 mm long. Young fruit is green and turns red or purplish-red when ripe. Each fruit usually contains two seeds, semi-elliptical in shape, with a longitudinal groove on the surface called the ventral groove.
Coffee fruit takes a relatively long time to develop. Small-bean coffee requires 8–10 months (maturing from October to December of the same year); medium-bean coffee requires 10–12 months (maturing from November to May of the following year); large-bean coffee requires 12–13 months. Rainfall has a great influence on fruit development, and climatic conditions directly affect the fruit's development process.
