How Do You Make Lemon Specialty Coffee at Home?

Three lemon drinks lead the current shop menu: Lemon Sparkling Americano, Salted Lemon Carbonated Americano and Jasmine Lemon Cold Brew. Each recipe lists its ingredients, ratio references and step-by-step method. The base for most of them is a cooked lemon syrup, made by simmering freshly squeezed yellow lemon juice with granulated sugar and deseeded lemon slices.

Removing the seeds matters, since they are the main source of bitterness. The guide also notes that medium-light roasted beans hold up well in fruity specialty coffee drinks; beans such as a Yirgacheffe Guddina already carry a clear lemon aroma on their own. The recipes suit anyone recreating coffee shop drinks at home or looking for summer beverage ideas.

Lemon's bright acidity is naturally suited to adding a refreshing touch to drinks, and when incorporated into specialty coffee, it can create surprisingly delightful flavors. Most people find lemons too sour to eat straight, but once their bright acidity enters food, it immediately cuts through richness and boosts flavor. Lemon tea, lemon candy, lemon tarts, lemon chicken feet... these everyday foods are all especially appealing thanks to the addition of lemon.

The coffee world is no stranger to lemon either. For example, Front Street's Yirgacheffe Guddina on the bean list already carries a clear lemon aroma. But that is a flavor inherent to the coffee beans themselves. When it comes to actually adding lemon as an ingredient, the specialty drinks currently selling well in coffee shops are the real stars.

Recently, many friends have left comments hoping Front Street would share how to make lemon coffee specialty drinks. Today we're delivering just that—three highly popular lemon specialty coffees currently on the market, so you can easily make refreshing, great-tasting drinks at home.

Lemon Syrup

The vast majority of specialty coffees rely on lemon syrup, so let's start with how to make it. Of course, you could just mix lemon juice and syrup on the spot, but cooked lemon syrup has a fuller flavor profile. If you don't mind the extra effort, I suggest learning this step first.

To be honest, making lemon syrup isn't complicated. Just cook lemon juice and sugar in a pot in proportion. The key is that this syrup, combined with black tea, can perfectly replicate the Vita* Lemon Tea that took the country by storm a few years ago.

(Not joking)

Ingredients: freshly squeezed yellow lemon juice, granulated sugar, deseeded lemon slices

(Lemon seeds must be removed—they are the main source of bitterness)

The method is simple: freshly squeezed lemon juice and granulated sugar at a ratio of 1:1.2~1.5

(adjust based on the acidity of the lemons used)

Cook over low heat. When the syrup becomes clear and slightly thicker than water, turn off the heat. Once cooled, a golden, sweet-and-sour lemon syrup is ready.

Store the syrup in a squeeze bottle or sealed jar in the refrigerator, and you're ready to start making lemon specialty coffees.

Drink One: Lemon Sparkling Americano

Let's start with the most common one in coffee shops—Lemon Sparkling Americano. The method is quite simple: basically, add lemon syrup to a sparkling Americano for flavor, then garnish with a few lemon slices. Simple steps, but the taste far exceeds expectations.

Ingredients: lemon syrup, lemon juice, sparkling water, ice cubes, lemon slices, espresso

There are no hard rules on ratios—adjust to personal preference. But one suggestion: try to use medium-light roasted coffee beans for the espresso. Dark roasts tend toward burnt bitterness, while lemon sparkling water pairs better with light roasts that emphasize acidity and carry floral and fruity notes.

Here at Front Street, we use Front Street Geisha Blend · Strawberry Candy from our bean list. Extraction parameters: 20g dose, 40ml yield, 32 seconds. Flavor notes: strawberry, berries, floral, raisin.

Steps: Prepare a cup of at least 300ml. Pour in 5ml lemon juice and 35ml lemon syrup, then add 80g ice cubes and two lemon slices for garnish. Finally, pour in 180ml sparkling water and a double shot of espresso. A Lemon Sparkling Americano is done.

Stir gently and it's ready to drink. The first sip brings the carbonated tingle of sparkling water, with a fresh, tart lemon aroma. Then the coffee flavors of Strawberry Candy emerge, with notes of strawberry and raisin. The lemon syrup balances the bitterness of the espresso, so the overall drink feels harmonious. It's layered, stimulating, and refreshing—a truly pleasant experience with a glass of this in an air-conditioned room.

But be careful—when pouring the espresso, do it slowly and carefully, or else...

Drink Two: Salted Lemon Carbonated Americano

This one is especially popular in the Cantonese region, and the idea comes directly from the lemon tea of the same name. It's made by adding salt and preserved plums to the Lemon Sparkling Americano. Salt provides saltiness, amplifying the sweet-tartness of the lemon and syrup; preserved plums bring the aroma of candied dried fruit. Compared to the previous drink, the Salted Lemon Carbonated Americano is slightly less refreshing but has a bolder taste and richer layers.

Ingredients: edible salt, preserved plums, lemon syrup, lemon juice, sparkling water, ice cubes, lemon slices, espresso.

The method is basically the same as the previous one, just add 4~5 preserved plums to the cup and sprinkle a little salt when extracting the espresso

(depending on the saltiness of the plums—the saltier the plums, the less salt you need, and vice versa)

. Then repeat the previous steps, and a Salted Lemon Carbonated Americano is ready.

(Note: For the above two drinks, you can also substitute tea for the sparkling water)

Drink Three: Jasmine Lemon Cold Brew

This is also a hit at major coffee shops. The process is a bit more complex, but the layers are richer. Besides lemon syrup, you'll also need cold brew coffee and cold brew jasmine tea.

Ingredients: lemon syrup, lemon juice, cold brew jasmine tea, ice cubes, lemon slices, cold brew coffee

Cold Brew Coffee:

Fruity medium-light roasted beans are also better suited for this specialty drink, so Front Street again uses Front Street Geisha Blend · Strawberry Candy from our bean list for the cold brew. Coffee-to-water ratio 1:10, 80g coffee to 800ml water, cold brew for 8 hours. After 8 hours, filter and it's ready to use.

Cold Brew Jasmine Tea:

Same principle as cold brew coffee—mix jasmine tea bags with water in proportion and steep in the refrigerator. Front Street uses Lipton jasmine tea bags, ratio 1:40, 20g tea bags to 800ml water, steeping time also 8 hours.

After 8 hours, remove the tea bags and it's ready to use.

Next, just assemble and enjoy. Add 30ml syrup and 5ml lemon juice to a cup, then add 80g ice cubes, 2 lemon slices for garnish, 150ml cold brew jasmine tea, and finally pour over 80ml cold brew coffee. A Jasmine Lemon Cold Brew is done. Stir and drink.

Because it uses jasmine tea instead of sparkling water, there's no carbonated bite—it's very soft. The first thing you notice is the jasmine floral aroma of the tea, followed by the fruity wine and strawberry notes of the Strawberry Candy cold brew, and finally the aroma of lemon syrup and oolong tea. The layers are distinct, the taste is mild and refreshing, rich yet not cloying—very pleasant.

Lastly: Vita* Lemon Tea

This is a bit of a digression, but it's also very easy to make. Just prepare an extra batch of very strongly brewed hot black tea, combine it with lemon syrup, a suitable amount of lemon juice, and ice cubes, and you'll get a lemon tea that matches the original—or is even better. The exact ratios vary with the strength of the tea, so Front Street won't share them here—you can experiment on your own.
