How Did Yirgacheffe Become Its Own Coffee Region?

Yirgacheffe began as a small town inside Ethiopia's Sidamo production region and later split off to become a recognized specialty coffee region in its own right. The Worka cooperative, founded in 2005 and part of the Yirgacheffe Coffee Farmers Cooperative Union, has roughly 300 member farmers and uses a washed process with a 72-hour fermentation to remove the fruit shell.

Rising market transparency pushed washing stations, cooperatives, small districts, harvest lots, and codes to the front of regional descriptions. Yirgacheffe is now subdivided into places such as Kochere and Wenago, and this detail matters because what is sidamo coffee and what is Yirgacheffe are no longer interchangeable terms in sourcing or on a bag.

Yirgacheffe was originally a small town under the Sidamo production region. Thanks to its unique terroir, it eventually became independent from Sidamo and emerged as a highly regarded specialty coffee region in Ethiopia. Small but complete, as the specialty coffee wave deepened, information such as washing stations, cooperatives, small administrative districts, harvest lots, and codes gradually became standard elements in regional descriptions. Market transparency has driven people to trace coffee back to its source, and more regional details have been disclosed. The names of processing plants and cooperatives under Yirgacheffe have also surfaced, such as Kochere, Wenago, and the Worka cooperative. This article focuses on the Worka cooperative, introducing its background, washed processing methods, and sharing the roasting and flavor performance of Front Street Yirgacheffe Worka washed beans.

Yirgacheffe was originally just a town within the Sidamo production region. Because the area possessed a distinctive regional character, it later became independent from Sidamo. Although it was once only a small town under Sidamo, it is small but complete in every detail. After the specialty coffee trend poured into Ethiopia, elements such as washing stations (processing plants), cooperatives, small administrative districts (towns or villages), harvest lots, and codes gradually became indispensable information when describing a production region. Along with rising market transparency, people began tracing coffee back to its production source, and more detailed regional information was made public. As a result, many regional names gradually moved to the forefront of the market, and coffee-related information became increasingly clear.

After Yirgacheffe became an independent production region, many processing plants, cooperatives, and small-origin names belonging to Yirgacheffe also emerged one by one. For example, Yirgacheffe can be subdivided into Kochere, Wenago, and the Worka cooperative, among others.

Here we focus on the Worka cooperative. It was founded in 2005 and joined the renowned Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) the same year. The Worka cooperative has about 300 coffee farmers under its name. The cooperative uses a fine washed method, placing coffee beans in fermentation tanks for 72 hours to remove the fruit shell. During the mucilage fermentation process, some of the acid produced penetrates into the beans. Washed beans often display brighter acidity because they contain citric acid, which gives a clearly perceptible sour taste, and the flavor after washing is also cleaner and brighter. Finally, after sun drying, they pass quality inspection by the Ethiopian Coffee and Cocoa Authority, and once qualified, are traded and exported through bidding.
