Yunnan Coffee Varieties: From Typica to Catimor and Brewing

How did Typica and Catimor shape Yunnan coffee varieties?

Yunnan coffee varieties begin with Typica, brought from Vietnam by French missionary Tian Deneng in 1904 and planted at Zhugula Village near Dali. Widespread cultivation started only in 1955, still with Typica. From 1988, Nestlé supported large-scale planting of Catimor lines such as CIFC7963, which now dominates, alongside smaller lots of Bourbon, Caturra, Catuai and Geisha.

Catimor arrived through the Portugal Coffee Rust Research Center and was selected at the Dehong Tropical Agriculture Research Institute, then trial-planted in Hainan, Baoshan Lujiangba and Ruili before spreading. Its rust resistance made it the practical choice for volume, while Typica declined to rarity. For pour-over brewing, Yunnan small-bean lots reward a medium grind and steady, gentle pouring.

Yunnan coffee beans have been steadily gaining popularity in recent years, and more and more coffee lovers are beginning to pay attention to the flavor potential of this land. Customers at Front Street Coffee shops often talk about how Yunnan coffee beans are performing today. The coffee varieties grown in Yunnan are quite diverse, including the long-established Typica, the dominant Catimor, and smaller amounts of Bourbon, Caturra, Catuai, and even Geisha. This article will guide you through the variety lineage of Yunnan coffee, starting from the first Typica brought by missionaries in 1904, to Nestlé promoting the large-scale cultivation of Catimor, and then to the introduction of new varieties like Geisha in the past decade, along with Front Street Coffee's pour-over brewing suggestions for Yunnan small-bean coffee, helping you fully understand the past and present of Yunnan coffee.

Yunnan coffee beans are receiving more and more attention. Customers who come to Front Street Coffee shops will more or less chat about how Yunnan coffee beans are doing now. In Yunnan, coffee varieties are quite rich, with common ones like Typica and Catimor, and lesser quantities of Bourbon, Caturra, Catuai, and Geisha. Front Street Coffee will now introduce you to the varieties of Yunnan coffee.

Typica Coffee Variety

The earliest written record of coffee cultivation in Yunnan dates back to 1904. At that time, French missionary Tian Deneng went to Dali for religious activities and brought several coffee trees from Vietnam, planting them in Zhugula Village. These trees were Typica. Typica has excellent flavor, rich acidity, and extremely high cleanliness, making it one of the oldest coffee varieties in the world.

Yunnan planted excellent varieties from the very beginning, but true widespread cultivation did not occur until 1955. During that period, all planted were Typica. Later, as new varieties were introduced, Typica gradually became scarce.

Catimor Coffee Variety

Catimor in Yunnan mainly includes CIFC7963, P series, T5175, and T8667, all of which belong to the Catimor lines.

In 1988, Nestlé supported Yunnan's coffee agriculture development, introduced Catimor 7963 from the Portugal Coffee Rust Research Center (CIFC), selected and bred it at the Dehong Tropical Agriculture Research Institute, and first trial-planted it in Hainan, Baoshan Lujiangba, and Ruili.

In 1991, Nestlé again introduced Catimor P1, P2, P3, and P4 from CIFC for trial planting, where P stands for Population. Among them, P4 had the highest yield, and subsequently in 1994, the P series began to be promoted for cultivation in Pu'er City, with P4 being the majority. Later, expert investigations found that Catimor P1, P2, P3, and P4 correspond to 7960, 7961, 7962, and 7963, respectively.

T5175 and T8667 were introduced by Nestlé from Central America in 1994. These two lines were first trial-planted in Pu'er, and both had lower yields than 7963.

After Nestlé vigorously developed coffee agriculture in Yunnan, 99% of Yunnan's coffee is Catimor, which is what we commonly call Yunnan small-bean coffee. These coffee beans were originally purchased by Nestlé as raw materials for making instant coffee, with low flavor requirements. Therefore, when discussing coffee flavor, Yunnan often exhibits low acidity, nutty, cocoa, and earthy notes, which are considered less ideal flavors.

Bourbon Coffee Variety

In 1981, when Professor Ma Xijin investigated ancient coffee varieties in Yunnan, he found in an ancient coffee forest near Zhuguli that red-topped Typica accounted for 31%, while green-topped Bourbon accounted for 69%. Some experts believe that what Father Tian brought to Zhugula Village back then was not only Typica but also mixed with Bourbon. Bourbon, like Typica, is an ancient and excellent coffee variety. Currently, Yunnan's Bourbon production is even less than Typica.

Geisha, Caturra, Catuai

In the past 10 years, Yunnan's coffee cultivation has continued to develop, and foreign quality varieties have been continuously introduced for research. Geisha is naturally among them. In the 2016 Yunnan Green Bean Competition, a Yunnan Geisha participated for the first time but could not beat the long-established "local snakes," ranking only in the 30s among 120 coffee beans.

Some experts believe that after Geisha was transplanted from Panama to Yunnan, the terroir and climate changed dramatically, and without sufficient years of acclimatization, it is inevitable that it would not adapt well. Moreover, the altitude for coffee cultivation in Yunnan is generally not high, about 1100 meters, and coupled with inadequate cultivation management, it is normal for the produced Geisha to have unsatisfactory flavor. By 2020, Yunnan's first batch of Geisha seeds was finally made available to the mass market in limited quantities.
